    Will definitely try this. Have been eating only okra since I turned vegan but its best to add the spinach last. Overcooking of the spinach kills the nutritional content

    I have not eaten any Nigerian soup since I started eating vegan. This looks good. Will definitely try it.

    Will cook this but way increase the quantity as I want it to last for a week.
    I brought different type of mushrooms
    Aubergine x2
    Bag of spinach x2
    I may x the can of tomatoe by 2 but not sure
    So glad I found this recipe though
    I wanted to make soup but without the meat
    Mushrooms will definitely fill at void lol
    I think I’m definitely going to eat it with Eba too😝

    You didn't use palm oil? And pls what is aubergine, and where can I get it to buy in lagos?

      Aubergine is eggplant = garden egg

    But anyway will add a bit of egusi and crayfish to this

    What is *eba?*
    First time hearing about it.

      It's made from garri (grated and dried cassava). You make eba by adding boiling hot water to garri, until it is dough-like. You can find garri in most African/Caribbean/Indian food stores.

      You're welcome! The consistency is not as smooth (and light) as fufu but still oh so good :)
