If you don't have an air fryer you can do it in the oven for 400F for 5 to 6 minutes. Make it in the small batch and see. Just make sure not to burn the dates.

Then, I tried for 10min, the dates became very toasty, but when I blended, they were still mild. Is there any way I can make them more sweet? I don`t think I can substitute this sugar for normal sugar until i make them sweet enough

Hi Annie, it won't get hard when you are blending it. Much like brown sugar, date sugar can become hard when exposed to air, or clump when excess moisture is introduced. It keeps best in a cool, dry, humidity-controlled environment. The best trick is to place the date sugar in the microwave for a few seconds until it begins to soften.

Before I use the blender to blend them, after they are cooked on air fryer, do i need to wait a little until they become room temperature? Also, my blender is not a food processor, but do i have to worry about breaking it? Also, after I make the sugar, should I store it in a jar outside my fridge or inside it(i can microwave it later when I get to use it on a recipe)

It won't be sweeter like regular sugar. It will be on the mild side and also depends on the quality and sweetness of the dates the taste varies.

I used medjool dates, my air fryer and vitamix blender on high and they still clumped together. Even after putting them in the air fryer twice!
I am not sure why. It varies depends on the dates quality.
Maybe put them in the sun first too
The vitamix probably gets too hot. Blend only a little at a time and do short bursts of time for blending.
