This was good. I made the eggplant filets pretty much exactly as you did. Crispy coating, and the eggplant was a good fish-like texture, kinda soft like salmon. All the spices mask the eggplant taste. I made tartar sauce and cocktail sauce and nom nom nom. Will do this again for sure.
I would say that when you bake the seasoned eggplant wrapped in Nori, that the flavor absorbed only at the surface level. But you had flavoring in the wet batter and in the dry dredge, and you apply that after you’ve cut up the eggplant Into thinner pieces, so the flavor is definitely there.
After watching the other videos you referenced to me, yours came out the best. The first one had alcohol. The second one was mid. The third one was good. I like your seasonings better. Thank you. 🎉
