@M LA Tuna of that size costs several thousand dollars on the inexpensive end. They have been known to sell for a hundred thousand or more. It takes a long time to get the cuts right to maximize yield and minimize damage.

I love the awareness he gives to his customers. Bluefin are a very vulnerable species because of how prized they are so it’s amazing how he makes people aware of the importance of eating all the parts rather than just the popular cuts.
When he said his parents "Let [him] help" in their restaurant, I understood his love for cooking. He didn't see it as being forced to help out, but a chance to learn. It's that thirst for knowledge that makes a true master-anything.

There are so many years of technical mastery to make this look as easy as he does. The fact that he looks so young betrays the years he put into learning his craft. This is technical excellence and attention to detail on prime display. Fascinating to watch.

I haven’t seen an ad in a few years. My phone has TH-cam on about 12 hours a day, having ads would waste an hour or two a day.. Having premium is worth saving 30-60 hours a month for me.
Although it looks delicious I rather not buy bluefin tuna since it's been in major population decline from overfishing and illegal fishing. Most of the demand comes from high end sushi restaurants.

I highly doubt that. More and more of the market in bluefin tuna is turning to fish farms because of how unreliable it is for fishing these in the wild. Also a lot of projects are working well to add some type of hormones in the bluefins to make them mate more efficiently to boost their numbers where they are endangered as well as locations where they may not be fished on. Other types of tuna as far as I know are not endangered. I am not saying just go on with how it is but I believe we are slowly but surely going uphill with sustainable fishing on this species. Don’t be such a doomer about this.
Just too many damned people. Even the fish farms are a problem because of the amount of other fish they catch to feed the farmed bluefin. In the end you have X resources and Y people, you get X/Y stuff per person, but it will not be equally distributed because that is the way of nature so a few will get the good stuff and the rest will have a bowl of slop.

Believe it or not, this is a small bluefin. They just keep growing. Mature adults are around 500lbs, and it's not unheard of for them to grow well past 1,000lbs. The record is nearly 1,500lbs and 12ft long.

bluefin tuna is hugely expensive watching a professional do it is enough, there is no way you'd be able to do it well with just one video nor would you want to. it's not only expensive but huge, how often do you want to cut up a whole cow?

I love the respect this man radiates, respect is something I've always likes about Japanese and Korean culture.
It's not demanding or authoritarian, its a friendly and freely given kind of respect that western culture misses.
This is an art form in it's own right. It's amazing seeing how people go from an animal into the different cuts. You can see the care he has for preparing this.

Yep... they're extremely endangered in no small part due to the Japanese market demand and insane prices.
I highly doubt that. More and more of the market in bluefin tuna is turning to fish farms because of how unreliable it is for fishing these in the wild. Also a lot of projects are working well to add some type of hormones in the bluefins to make them mate more efficiently to boost their numbers where they are endangered as well as locations where they may not be fished on. Other types of tuna as far as I know are not endangered. I am not saying just go on with how it is but I believe we are slowly but surely going uphill with sustainable fishing on this species. Don’t be such a doomer about this.

Even the fish farms are a problem because of the amount of other fish they catch to feed the farmed bluefin. In the end you have X resources and Y people, you get X/Y stuff per person, but it will not be equally distributed because that is the way of nature so a few will get the good stuff and the rest will have a bowl of slop.

Believe it or not, this is a small bluefin. They just keep growing. Mature adults are around 500lbs, and it's not unheard of for them to grow well past 1,000lbs. The record is nearly 1,500lbs and 12ft long.
