    For Jerk chicken
    ---------
    1 kg chicken legs
    1 tsp salt
    1 tsp all purpose seasoning
    For Marinade
    -------
    3 garlic cloves
    1 jalapeño pepper or bell pepper
    2 spring onions
    1/2 white onion
    4 sprigs thyme
    1 tbsp brown sugar
    6 all spice berries or 1/2 tsp all spice powder
    1 scotch bonnet pepper / or a piece
    1 tbsp oil
    1/2 Lemon juice
    1 tsp gravy browning / or dark soy sauce
    For Rice and Peas
    ----------
    1 cup red kidney beans soaked overnight
    6 cups water 4 sprigs thyme
    3 garlic cloves
    1 tsp salt
    1/2 can coconut milk
    2 spring onions and thyme
    1 scotch bonnet pepper
    1 tbsp seasoning blend
    Black pepper
    1 tsp all purpose seasoning
    3 cups jasmine rice - (and there was 4 cups liquid in the pot)
    1 tbsp butter
    2 ripe plantains
    Oil for frying
    For Coleslaw
    --------
    1/3 a small cabbage
    2 small carrots
    3-4 tbsp mayonnaise (or to preference)
    1 tsp mustard (optional)
    1 tbsp honey or sugar (optional)
    1 splash vinegar
    Black pepper to taste

    I always say the same thing about chicken, like who washes it in such a manner that they contaminate their entire kitchen - LOL! One reason I actually dread skin-on chicken... It takes so much longer to clean than skinless, but I refuse to eat dirty chicken 😝

    My parents are Jamaican and they say “Plan tin” . Which is how I pronounce it.
    Thought all Jamaicans pronounced it like that. 🤷‍♀️

    I know it's plantain but I pronounce it as "plan-tin"😆 lol don't come for me lol. And yes! Once you turn your back, it will burn! You have to watch it like a hawk! Lollll And thank you for cleaning the meat. There's no way I would cook meat without cleaning & seasoning it. Your meal looked amazing.

      I never heard it pronounced "planTAIN" until I moved to the U.S. It's always been "planTIN" for me too.

      @@hzsisterscrafts9574 Plantains are not bananas. They are from the same family though. They tend to grow bigger than bananas and are firmer. Plantains can be eaten when ripe or when green. They can be fried, bolied, baked etc....whichever method you prefer.
