      I wouldn't say quite impressive..I would say it's brilliant... My daughter works as a teacher in Dubai and her pupils all come from many different places...even if they come with only one language she tells me by the end of the year they are all talking to each other in all of the languages...The sooner you start the better. Loved this vlog.

      It is impressive. I was fortunate to be able to live in Zurich, Switzerland for a year and most people if not all spoke 4 languages. It's very common for Europeans..

    Your presentation of the town was so textured and casual, I could faintly smell the water and the scent from the ancient wood structures. The perspective of following Anna walking through the narrow streets brought me along with her.It wasn’t hard to imagine the people of days past, walking beside her.It felt like a Zeffirelli set.     I think we need to up the ante in the paint colour debate. Going forward, every room painted green = 1 donkey added to the chateau. 3 more rooms (including passageways) painted green = 3 donkeys/1 motorbike. 1 room painted Orange = cancellation of a motorbike’s worth of green rooms.

    For me, gas cooking has the greatest amount of control. My stove delivers different BTUs at each burner plus infinite adjustments. Gives me a lot of flexibility when I cook.

    Only having had electric or gas stoves I love my gas stove top and in case of a power failure you will always be able to use gas.

    As for the scallop dish, this is probably what is going to get my wife hooked to your channel! It looked certainly very good and Philipp scored a lot of points with Anna. She truly looked like she was very pleasantly surprised and enjoying the flavours. As for me, as Philipp is putting the bar so very high for husbands, either I buckle up or I ban the channel.

    Ok I am sitting here feeling all the things… I am about to share way too much but I want you both to know how much your channel means. My husband was diagnosed w primary progressive MS a few years ago. So hard to see all that this has taken from him. One week after lock down he suffered bilateral pulmonary embolism which, oddly enough led to a colon cancer diagnosis. We spent the Covid lockdown dealing w that and chemo and MS all while caring for my husband’s 88 year old step mother. He is preparing today for his first colonoscopy tomorrow, the first since surgery so there is no small amount of anxiety today, although every reason to feel positive. In the midst of this, today my mother-in-law fell and is hospital as she injured her ribs. So feeling quite low I watched your weekly post and it was so beautiful. It filled me with hope and helped me to look past this moment w great anticipation of one day visiting the Chateau and the surrounding countryside. I know that you are not attempting to accomplish this type of impact but I wanted you to know how very much I appreciate you allowing us to share this journey w you! In joyful anticipation and with much gratitude- MAB

    I know why chef's love gas, but a good induction hob is so powerful these days, it's fantastic. You have the same amount of control. Also its much easier to clean and keep safe with children. But most importantly, in light of climate change and Russia increasingly turning off European gas supplies, I think it's probably a wise move to be as free of gas and oil as possible.

      But unless France or most of Europe switch to renewable energy, electrical power sources would still rely on gas or fossil fuel to generate electricity to cook with induction cookers. Just saying. 🤩

      @@e_moonstarstellar5666 most of the energy in France is produced by nuclear plants. So in terms of reluabilty and CO2 it is actually pretty good - storage of spent fuel remains a problem of course

    Induction is much safer with kids around, I find that both are good but Inuction seems to be easier at controlling the cooking process.
    That's just my opinion!

    Gas, definitely. I am a very keen cook and baker, and having used both gas and electric for many years, I definitely favour gas. You have more control over the heat. I recently replaced my 19 year old Italian gas cooker with a new Italian gas cooker. When planning your kitchen layout, be sure to place the storage of the most frequently used items close to the dishwasher. Our drawers containing the everyday plates, bowls, cups, glasses and cutlery, are all a step or two away from the dishwasher. It makes it easier when the children are able to help with the unpacking of the dishwasher too. My baking bowls, utensils etc, are in drawers across from where the Kitchen Aid and Thermomix live, and I often think this was my most sensible planning idea. Also, make sure to have power outlets on at least one end of the island. Ours are in constant use for phone charging and assorted appliances.
    The town is absolutely idyllic, and I’d love to visit someday. It looks like a fairytale. I love scallops, and would like to try the entree recipe. I have never cooked parsley in this way, but I’m very curious to try, and I would never have thought of the beetroot and sesame oil combination, however I trust Anna’s good taste 😁

    Loved the visit to Honfleur, we were there in 2019, our last holiday. Loved the hidden garden, the streets, the shops, the restaurants, the harbour, the church, the market - everything !

    We have used induction for about 10 years now and most of my extended family have as well. We all used Gas before but made the switch primarily because it was more efficient. We found that there are many advantages to induction such as safe for kids and pets and control of temp and cooking time. One of the biggest advantages over gas is induction is a million times easier to keep clean as nothing ever “cooks” to the surface and is easily cleaned away. For all of us, we would never choose anything else as there are far too many advantages to induction.

      yeah, but you can't butter baste steak on induction, it does not heat the pan if you lift it off slightly to get the butter to pool at one end. We have induction, for most things it is great, but it is really not great for stir fry (wok), steaks, any food where you need to shake the pan (such as to mix vegetables). Most inductions hobs have digital buttons, instead of a physical dial, which is so much easier to adjust.

    The town reminds me of Old Quebec City which shouldn’t be a surprise I guess. Nova Scotia has a lot of History of France and England fighting for the land here. There are still a couple of garrisons restored for tourism and in summer people dress in appropriate costume and do the work as it was done then. There are still many places with French names and cultural heritage as well. The French were helped by the Indigenous Mi’Kmaq people as many people died in their first winter here from starvation and scurvy.

    FYI Glass originally could only be made affordably in small panes by taking a glob of molten glass on the end of a metal rod and spinning it. The centrifugal force would form a thin pancake of glass that would be trimmed square.

    I had an induction cooktop in my last home, sadly now have gas. Induction is just as fast as gas and just as adjustable BUT! To clean the induction top, you just give a quick spray and wipe and it is sparkling clean. With gas it is much harder to clean, you get blackening in all those nooks and crannies, your saucepans get black bottoms, the tops of the burner rings rust and corrode. Also with induction there is no risk of accidentally leaving an unlit burner slightly on. As a keen cook, I say induction every time.
    Edit: reading the comments, it sounds as though people who strongly favour gas, have not used induction and are likening it to old-fashioned electric. If they have worked with induction they might comment differently.

      This is what is drawing me to induction (see above reply) To be able to clean with a swift wipe over appeals hugely! But, I love the look of gas, especially as I'm switching to a range cooker. The choosing though, it's agony!

      Earlier I replied that you should have both. Induction and Gas. Your kitchen seemes large enough. Each option has its own set of plusses and minuses. Having both will give you more options. Once you have six guest rooms, this may come in handy. Expanding to the out buildings may mean needing more kitchen cooking space.

      I agree people confuse induction with electric and ceramic (which are woeful to cook on). Induction is amazing. And one final myth buster - we do cook stir fries on ours 😊

    I can’t imagine cooking with anything but a gas stove, but I’d be fascinated to learn all about the features and benefits should you decide on an induction stove.     I admire your stamina, determination, and taste. I inherited an old home designed & built by my dad, a once famous architect. It was his final home, where he retired. My mother left it in challenging condition when she reached 100 years of age. I've been spending the past two years patching, sanding, painting, stripping (etc) and still I'm not done. Keep it up! It's kind of wonderful to see it all come together, after imagining so much in one's mind, or after waking up and conceiving something fresh as one rises from 'dream world' with fresh energy. A lot of strong coffee, at least in my case, also helps.

      I wish, if I were living in France, that I could also enjoy a fresh croissant with my morning coffee. Once, standing in line in Paris at an ATM a young male professional was getting cash, and holding a baby stroller. I peaked over the edge at the baby, and saw the cutest little face enjoying a freshly baked chocolate croissant - and wished, with all my heart, that in my next life I could be born as a baby in France.

    From my experience, you need both induction and gas in a professional kitchen, cause with induction cooktops you could only use pans that are compatible with induction cooking, so no woks or copper pans. I personally prefer gas cookers cause they’re versatile and with a high btu and flame you could make stir fries quicker and you could use any type of pans on it. I think either gaggenau or Miele have induction cookers for woks, but it’s a big investment,and still you cannot achieve high temperatures that are needed for best results when cooking with carbon steel woks.

    Loved the tour of Honfleur, the church, alleyways, waterfront, etc. You both have a way of conveying the essence of an area in a short amount of time.     The music was sublime today. My husband is from a multilingual family. He is from Lugano, Switzerland. He was schooled in Italian.he spoke English at home. His grandparents only spoke German. And he learnt French at school. He now lives in Queensland, Australia and still these language skills have helped him on many occasions. Especially when we travel and with tourists.

    From A Chef Perspective, I would prefer gas, with the same reasons as Phillip gave, not to mention the flavor .. And yes, with a good pallet you can taste, & even smell the difference ..
    Keep Doing What Your Doing .. Because What You Are Doing Is Nothing Like Any Other

      I find it interesting how different countries are regarding kitchens. Here in Germany, gas hobs are a pretty rare thing in private households nowadays. Most people have either electric ceramic hobs or induction hobs. I've seen a gas hob twice in my life.

    For the feeling I think gas is super nice, but when getting used to it induction is just as nice… as well as more safe and efficient energy wise. Induction is the way to go I think especially when building a new kitchen

    I wood go for induction. Heats up quick and are cold right away, easy to clean and safe for the kids. Beats everything, even gas , says someone who tested all kind of stowes.
    If you are unsure, get both.

    I love cooking and I have experiences with both, gas and induction. I thought for years, that nothing can beat gas, but that´s not correct. Induction is faster as gas and very easy to control. I love it.

    Funny that you asked for some advise whether you should go for a gas stove or an induction one. Funny because just the other day I was told by a chef that induction is the better choice. Because of the big plate you can slide the pans a little which gives you the opportunity to vary with cooking temperatures. However, an average induction plate takes about 8000 watts, which needs a heavy duty electrical supply.
    Just the other week I discovered your project and the funny beautiful movies you make. I enjoy them a lot. Thanx.
    And since Anna is starting to learn to speak German, werde ich nächstes mahl auf Deutsch antworten. 😜👍🏼

    Scallops with beautiful handmade sauces that look like they came straight out of a really good restaurant, and then frozen pizza for the main entree. Sounds a lot like home cooking to me!

    I was always a gas fan, however, after 8 years in an apartment with a Neff induction hob we moved - Our temp rental had gas and It really wasn’t as great as I remembered. We are in our own home now and it’s induction all the way.
    Looking forward to the donkeys 😉

    If you're doing a lot of cooking for guests, induction cooktops are sooo much easier to clean. That's my bottom line. =)

    Lily is a consummate little actress!
    I had always had a gas stove but bought a house that came with a normal electric stove with a glass top. I intended to replace it with gas but loved that the glass top was sooo much easier to clean. In the end I replaced it with a glass top induction, in part because I also installed solar. The burners heat up the pan in seconds and also drop the heat instantaneously, two of the things I loved about gas. One thing you can't do is wok cookery - induction needs a flat bottomed pan. Also, the pan must be magnetic (iron or steel) so copper doesn't work. For me the environmental implications of gas was important enough for me to switch to induction even though on mine I don't have the infinite control of gas. I think some chefs are switching for the same reason: if your brand is organic, seasonal, local then clean(er) energy is consistent with that.

      I had always always used gas for the hob but moving to a new house 6 years ago I decided to go for electric as it would be easier to clean...and it is and it's no different in my opinion once you get used to it...which took about a day😊

      There are very good induction compatible woks which work perfectly on induction and, mine is not flat bottomed just the same, rounded.

    Next January I will start renovating an 18th century Manor in the Champagne region. In my new kitchen I want to have both induction as well as gas. The gas mainly for Wok cooking and the induction for the rest. I was a absolute gas fan but in my latest Parisian apartment there was no gas and with a big disgust I had to start cooking with induction. Boy was I wrong....it's amazing how quick it heads up and cools down. I miss the gas for cooking asian wok food or for grilling bread or chestnuts..... You really should try induction!!!!!! Do you have city gas at the chateau? If you have you're lucky for I find bottled gas not as hot as city gas.
    I really am a fan of you guys and am very much inspired by your decoration skills Anna...

    I love gas too, and have it now, but will switch to induction when I get a new stove. In the US, gas is from fracked gas, not good for the environment. A family member switched from gas to induction, she’s a great cook, and loves her induction stove (cooker)

    It is really interesting to visit Honfleur with you guys. Being from Québec City, it felt like visiting the European version of my home town that was also founded by Samuel de Champlain. By the way, Québec is not Canada, it is part of it but Canada was mainly founded by the Brits. You should come visit Québec some day, it is quite the mix of cultures, just like your beautiful family.

    Beautiful and more beautiful, thank you for sharing the hidden treasures in Honfleur and the history of Samuel de Champlain. De Champlain is recognized and honored throughout Québec, bridges, parks, schools and multiples streets and highways. About the range, if you enjoyed cooking, go with gas. Induction is great, fast but a bit finicky...the pots and pans needs to contain enough iron atoms to create a magnetic field with the induction stovetop: yes to cast iron fry pans and most stainless steel pots, and no to aluminum, ceramic and no to those beautiful coppers pots and pans.

    Lovely to see Honfleur again! Induction WITH a gas burner somewhere for stir frying etc...and those times when the electricity cuts out; but remember you have to have the correct (steel or iron) pans, so those skillets you used today won't work (check with a magnet: magnetic = OK for Induction).

    as stated before a big advantage to gas is that you can use it if the power goes out. Also the simmer can go really low on a good gas stove.

    Gas! Love it. And if you like cooking I really recommend cooking in Colombian ceramic pots (they are black). The food taste delicious and the pot look great on the table. I think I am going to copy your scallops recipe! It looked amazing!

    Gas! It cooks more evenly and easy to adjust temperature to just the right level. And since you don't have a working fireplace in the kitchen, it can keep you from freezing and still allow you to prepare food if you have a power outage.
    Been there, done that in the middle of a blizzard. Lol.

    Hello, we moved to France last year and refitting our kitchen was one of our first jobs, as we were opening a small Chambre d’hôte. I had always cooked on gas, however the village didn’t have it piped in, so we would have had to have calor gas. We made the scary decision to invest in a lacanche range with induction hob. Wow, I absolutely love it, it’s immediate, controllable, safe, clean and you get used to it very quickly. Only one drawback though, I had to buy all beautiful new pans. Oh well, we all have to make some sacrifices. Loving the videos, keep up the great work. Jo & Brian, la Maison en Champagne.

    If you have a power out, you will be so happy to have gas ! The other night or area lost power for two hours but I could still make tea and fill hot water bottles !

    Stick with gas. I've used both, currently got induction. I find the top annoying in that if you drop spoons or a pot lid I cringe. Also, you can't toss pans or swirl on the heat - my staple is a souffle omelette and I can't do this on an induction. Both are instant heat, but I also find it convenient when we occasionally lose power in November storms to have a gas ring to heat food and water/a coffee pot.

      @@HowToRenovateAChateau Forgot, you can't use copper pans on an induction. I bought a heat transfer plate to try use them, but it didn't work well. So if you plan to use copper, an induction is a no-go

    Honfleur harbour is magical. I breakfasted there some years ago when doing a tour of the gardens of Normandy with a friend. Although you played some music by Satie in your video you didn’t mention the incredibly quirky Erik Satie Maison museum. Surely a highlight of the town!? Otherwise, as always, an entertaining video from you both.
