I'm late, but This frosting is ok at room temperature for while. If you put them in the freezer instead, it will preserve the moisture in the cake. It won't dry the cake like the refrigerator does.

Yes dear you can use steel bowl. Please use good quality glass bowl for double boiler. After melting chocolate add cream then cover with cling wrap.Not cool down completely, mix and cover. Thanks

Hi With milk and chocolate I shared other recipe. Please check that recipe. But w 2.5 cup chocolate and half cup milk should not be flowy. Cover it with cling wrap and refrigerate for 1 hour , you will get perfect consistency. Hope this help. Thanks
