As a recently diagnosed celiac... I appreciate seeing GF recipes... Is it hard to be in Japan for those who have Celiac? I miss ramen and udon so much since becoming celiac and I am trying my best to make GF udon... But cannot find a ramen recipe that I like 🤔 and I know that there is rice ramen that one can buy at the market but I haven't found one that resembles the texture and taste that I am used to

The celiac & gluten intolerant will be so grateful, myself included. Human beanz are such pleasure seekers when it comes to food however 70% of our immune system is in our gut & given the stomach digests thoughts too, keeping the gut healthy & the immune system appeased, is very important. i think psyllium husk is for fibre mostly (i usually add a teaspoon to my hot chocolate haha), if you want more fibre to your diet. maybe it can be skipped; or use oats as replacement. 🤔 edit: i'm thinking since psyllium husk will become like a gel-like structure with a bit of water, maybe agar powder might work as replacement too? but i don't know how agar will become in baking haha.
I'm pretty sure that the psyllium husk is to act as a binder, like egg would. So I would look up egg replacement ideas. (I don't bake, but I am Gluten-intolerant)
