  • This is a can of sea urchin pate that I picked up during a recent visit to Spain (more Spanish weird stuff in a can to come - I promise, but maybe none quite this weird)
    It cost about €4.50

Very good description I would say. As a chef, I'd call the taste of uni the purest umami you can find. Concentrated seafood flavour, yes. Like prawns if they had stronger flavour. Salty but not salty is a very good way to describe it. I dont know if you have it outside of sweden, but over here a popular sandwich condiment is Kaviar, like caviar but mashed and child friendly, in a tube. It tastes kinda like uni. You have a lovely mind there and your shockingly positive comment section reflects it. I'm new here and it's been a pancace stack of delights.

I'm Spanish, and one of my most treasured childhood memories was when I'd go up North to Asturias where my grandparents have a house near the beach, and we'd go down there to grab a bunch of sea urchins for dinner. Between this and callos in the previous episode (both not exactly everyday but fairly normal food items over here) it's weird how much just regular Spanish culture seems strange to foreigners, especially ones as geographically close as Brits. Then again, when I studied in the UK I had a bit of culture shock with the food there as well (I still don't understand how baked beans are such a big deal), so may be a tad hypocritical of me.

Actually for some people of the Meditarranean it is quite normal to just take the sea urchin from directly from the sea, open them and eat them with a spoon. Also, apparently only the female urchins contain this substance and you can recognize them because they usually have algae and little stones on them unlike their male counterparts.

I think this would be good on, what we know here, as Melba Toast. They are pieces of bread, but smaller in size and very hard and crunchy. I like the white wine idea. Melba toast use to be served at restaurants, but you don't see it much, if at all anymore. It is very versatile and would be perfect for a bit of palate exploration, like this pate`.

Some of our salt is iodised. The amount added is on the order of 20 or 30 parts iodine per MILLION parts of salt. I'd be surprised if you could taste iodine if you ate the salt straight from a spoon. I've just looked up some studies on this and under test conditions, people can't taste the iodine in salt until it is in much higher concentrations.

"Outdoor Chef Life" has some good videos on eating sea urchin, and really there's not much more to a sea urchin, not a lot of guts, a sort of "mouth basket" which is the teeth/jaws which are 5-sided because urchins are 5-sided, and depending on the season there will be roes in there or not. You crack open a few and however they are, will be how they are that day so if you find fat roes, collect away. Ideally you eat them right out of the urchin, or very freshly collected, and basically they taste like the ocean.

I've had this experienced with tinned seafood before. The initial hit might be a touch much, but once I have a bit more, I begin really enjoying it. Just had first try of a tin of seasoned, broiled mackerel (in soy sauce and sugar) from Japan. Seeing a bunch of skin on the chunks was a tad offputting to me (tad squeamish about the texture and taste of fish skin and silverskin), but once I got that scraped off, the actual fish was delightful.

I tried uni at a great restaurant and what struck me most was how fast it melts on the tongue. The other thing I vividly remember was thinking “this tastes like the sea crying.” If I could easily get the sustainable varieties here I’d eat it all the time and only be limited by the cost, since it’s treated as more of a delicacy than salmon et cet. It’s mild, simultaneously familiar and strange much as you describe this fish-mixed version.
    I enjoyed this, thank you!

All commercial canned and pouched cat and dog food in the UK is, and has been for many years, tasted by humans. I've tried catfood - and it tastes exactly like unseasoned fishpaste, with granular bits in it. Neither pleasant nor unpleasant. However, there was a beef and tomato variety, that tasted really nice. You could probably have served that to someone with pasta, and they would never have guessed.
But yes, all UK petfood is tested by humans. Cats MUST have the nutrients found only in meat - feeding them vegetable matter only, will kill them off quite quickly. Cats are 'Obligate Carnivores', and their digestive system is not good at processing vegetable matter.

I have had sea urchin in sushi. Maybe I just don't know what iodine is supposed to taste like, but that wasn't the impression I got. To me it seemed very rich and very weird, like something you'd eat once and go, "Hmm, tastes alright. Glad I never have to eat that again." I can definitely see how some people really love it, but it's not for me.
Edit: Maybe I have to give it another shot as a spread over toast instead of a big glob over rice, like perhaps it's one of those foods that's better when you eat less of it at a time. That said, in America, it's probably way easier to find it on sushi than in a can. Maybe if I scour the H Mart near me I'll get lucky.

Uni isn’t bad if you don’t mind raw seafood especially shellfish but processed into oblivion like this not so sure.

I'm going to try it raw sometime (I reckon the best way must be to dive for them and eat them right there on the beach). This wasn't bad though. I think the sweetness of the white fish in the pate saved it.

I have heard uni described as tasting of the sea...

Correct. Like oysters, they taste of rocks, seaweed and sea water.

Did you see the movie, The French Connection? One of the bad guys, in Europe, plucked a sea urchin from a rock, and ate the edible bits.

I was served sea urchin on a business trip to Japan, in a traditional restaurant where you ate sitting on the floor. Not the most pleasant thing I have ever eaten, but had to persevere as customer paid a small fortune for a posh looking wooden box full of the stuff. Plenty of wasabi helped with the taste!

Looks (and most likely smells) like the horrible little jars of Shiphams fish paste of a bygone age, the smell of which used to make me wince at best and retch at worst. They surely can't still be making it. It was hard to not wonder about the stench of the factory and the poor souls therein.
