Hi! When you made the recipe, did you use 10 lbs of cleaned chittlins (the amount Ms. Chris had after she cleaned them as shown on her last video) or did you use 10 lbs of frozen chittlins (the amount that is there when you purchase the chittlins from the store), since they're different amounts/weights because the membranes are removed during the cleaning process? I'm asking because I want to make sure that I purchase enough for my family and also make sure that I am following the recipe correctly and am not over or under seasoning. TIA !!! I'm glad her recipe turned out great!

You got it as in the back woods wild meat was all we had plus the land!the cleaning (empty the pig intestine draped over the clothes line was my job.you are 100% right to cleaning.I was taught to be particular where I eat. I eat only what I clean. I take pride in that learn.my dear grandma an Indian who couldn't read or write presently passed at the age of 104 yrs. I'm so glad you posted this recipe. I already knew how to clean them but I couldn't remember how to cook them (because my mom normally cooked them for me - I just had to help clean them). You are right about the red bucket. I thought I would never get them cleaned. It was my first and last time preparing them. I did it for my father. I had to call my step mother to help finish cleaning them. We fry ours. Before mom and dad devoiced, they would clean from scratch, a 5 gallon stone jar full of them. Then they would invite several preachers over for dinner. There would be known left. Dad had one restaurant he would eat them. Like you say you have to be particular with the ones you eat Also, I played sick the last time my grandparents killed hogs. They did not let watch the killing, but I got to see everything else. I think we had fried chicken for lunch. You know I did get sick on the way home. That's what you get for lying. Love your video. From Virginia

I cannot believe how EASY you made this look! My mother has cooked them for years and although she's taught me all of her recipes, I HAVE BEEN SERIOUSLY INTIMIDATED TO COOK CHITTLINS'.... MAINLY BECAUSE OF THE CLEANING PROCESS. That is something that I've watched the women in my family take EXTREMELY SERIOUS & frown upon even the littlest speck of trash on them. I thank you so much for sharing this. You have taken every fear I've had about cooking chittlins' totally out of my system. Thanks for posting this and also thank you to your daughter whom I presume was filming. You are a GREAT historian...or great HISTORIAN!! You have not just made the idea of chitterlings historically understandable to those who otherwise would never know BUT/AND you have made it interesting. As somebody whose parents were great cooks (creating many dishes we love... GOOD, WELL COOKED food) you have made others curious about their heritage foods. I have neighbors on one side who are recent immigrants with large families. They are kind and gracious people who have invited us to share many times. They also relate the history which is, to me, almost more important than the food. It more than likely was the survival of that group. My own people escaped starvation (because of the ship almost going down and lots of stores spoiled or washed over). The fact that we are both here is a testament to not giving up no matter what the circumstance. How many people do you wonder about who could/would not survive today. Maybe it's just me. Thank you so much for the care and time you take to do this. Long after you are gone I hope that your kids will find this record a blessing to them. You know....we don't EVER know what's gonna happen. But if you know what you know.....

Chris now you know you can cook!!!! The white pepper is brilliant, my mom cooks her chitterlings in the oven to contain the smell, bell pepper, celery,red pepper flakes onion, seasonings, and in her roaster pan in the oven, no smell but for the bell pepper, onions, and celery, and super tender. Going back to basics at my house. My grandparentsI fed me chicken feet, pig feet, chittlins, hog head souse, etc. This food fills the belly and keeps you going. Thank you for teaching me exactly how to do this.
My grandmother & mother use to make us clean chitterlings for Sunday dinners & holidays. I tell you, when I heard you talk about the cleaning process and what to do I promise you sound JUST like my grandmother! I just love you!!! Old school cooking at its best! You taught me a good tip about removing the membrane. 15 years cooking them and i didn’t know that. THANK YOU! One thing i do though is use a pair of kitchen shears at the end of the cooking process to cut them up in the pot so when you put them on the plate they are ready to go!

You're such a sweet lady for giving these instruction videos with exact details. My goodness, that's a LOT of work. My best friend brought me some chitlins' years ago at work. She was so particular and clean, so I knew--like you--I could trust her. They were delish! She served & cooked the exact same way, with Cole Slaw & hot sauce. Your girls are blessed to have you to teach them the old ways. I know my grandmother use to give hers away and people would come for miles through the country at hog time, because they had a self-sufficient farm, and hog time fed many country folk back then. I've watched a lot of videos on how to cook chittlins, and your's look the best so far, and I love how you went through the cleaning process in such detail, and the baking soda and cilantro tip! This I'm going to try.
I trust Chris. I have made a couple of her recipes and I know how to cook too! They all have turned out delicious! I've cleaned and cooked chitlins for most of my young life and got tired of cleaning them. I wanted to see how other folks cook them and some of them are a bit overboard to me. I knew Chris would be a no nonsense method and I learned about adding cilantro. The smell doesn't offend me but some of my grandkids might complain and I don't want to have to hurt their feelings. lol
I loved this video too. Great job explaining and great ideas on cooking them. My dad use to put a peeled potato in the pot and a jalapeno. This year I will serve them with Thanksgiving dinner and use your cleaning tips for the smell. I love Chitterlings, we just don't eat them often. I wanted to first thank you for the part 1 & 2 tutorial. It has been awhile since I cleaned chitterlings. You did a phenomenal job. I didn't look at another video. Just like Nana. I learned how on the red bucket 45 years ago. I tried Queenella Brand/Smithfield triple cleaned they were so thin that they cooked in less than 2 hour and were mooshy. My juice was good. But I had to send a bad review to Smithfield. Thank you though because the water after I cleaned them 5 times was so clear you could drink it and my house did not smell at all. Keep up the good job. We need people like you to teach these young people how to cook clean food 🙏🏾❤

Great video! For those of you who cannot find chitterlings during the pandemic in your local supermarket, go to a Korean or International Food Market. They have them but they are fresh and you have to really clean them well which this lady did in part 1 of the video. Happy Thanksgiving 2021 to everyone who is watching!

I made them for my husband I cleaned them yesterday and cook them today that cilantro and I added fried onions and fresh onions OMG so delicious and tender bring them to boil for the first hour then simmering for 3 hrs total cooking 4 I follow the steps the best recipe thanks

However I tried this recipe today with the red bucket ( which surprisingly wasn’t as bad as I expected it to be lol ) and there was absolutely no smell . Thanks for posting this and also thank you to your daughter whom I presume was filming. You are a GREAT historian...or great HISTORIAN!! You have not just made the idea of chitterlings historically understandable to those who otherwise would never know BUT/AND you have made it interesting. As somebody whose parents were great cooks (creating many dishes we love... GOOD, WELL COOKED food) you have made others curious about their heritage foods. I have neighbors on one side who are recent immigrants with large families. They are kind and gracious people who have invited us to share many times. They also relate the history which is, to me, almost more important than the food. It more than likely was the survival of that group. My own people escaped starvation (because of the ship almost going down and lots of stores spoiled or washed over). The fact that we are both here is a testament to not giving up no matter what the circumstance. How many people do you wonder about who could/would not survive today. Maybe it's just me. Thank you so much for the care and time you take to do this. Long after you are gone I hope that your kids will find this record a blessing to them. You know....we don't EVER know what's gonna happen. But if you know what you know.....

Chris now you know you can cook!!!! The white pepper is brilliant, my mom cooks her chitterlings in the oven to contain the smell, bell pepper, celery,red pepper flakes onion, seasonings, and in her roaster pan in the oven, no smell but for the bell pepper, onions, and celery, and super tender. Going back to basics at my house. My grandparentsI fed me chicken feet, pig feet, chittlins, hog head souse, etc. This food fills the belly and keeps you going. Thank you for teaching me exactly how to do this.

My grandmother & mother use to make us clean chitterlings for Sunday dinners & holidays. I tell you, when I heard you talk about the cleaning process and what to do I promise you sound JUST like my grandmother! I don't eat chitterlings but, my brother wants some for the holiday so, I will be hooking him up. This is a great video!

I've never have had a taste or desire to eat them. I married someone who LOVES.....them, I do most of all the cooking in the house. So Thanksgiving he wanted to go out to gets some at a soul food restaurant. I ask him to give me a chance to cook them to save money. I just love you!!! Old school cooking at its best! You taught me a good tip about removing the membrane. 15 years cooking them and i didn’t know that. THANK YOU!
One thing i do though is use a pair of kitchen shears at the end of the cooking process to cut them up in the pot so when you put them on the plate they are ready to go!

You're such a sweet lady for giving these instruction videos with exact details. My goodness, that's a LOT of work. My best friend brought me some chitlins' years ago at work. She was so particular and clean, so I knew--like you--I could trust her. They were delish! She served & cooked the exact same way, with Cole Slaw & hot sauce.
Your girls are blessed to have you to teach them the old ways. I know my grandmother use to give hers away and people would come for miles through the country at hog time, because they had a self-sufficient farm, and hog time fed many country folk back then. What I wouldn't give to go back to those days.

I trust Chris. I have made a couple of her recipes and I know how to cook too! They all have turned out delicious! I've cleaned and cooked chitlins for most of my young life and got tired of cleaning them. I wanted to see how other folks cook them and some of them are a bit overboard to me. I knew Chris would be a no nonsense method and I learned about adding cilantro. The smell doesn't offend me but some of my grandkids might complain and I don't want to have to hurt their feelings. lol
I loved this video too. Great job explaining and great ideas on cooking them. My dad use to put a peeled potato in the pot and a jalapeno. This year I will serve them with Thanksgiving dinner and use your cleaning tips for the smell. I love Chitterlings, we just don't eat them often. I miss them and pigs feet. lol I love that you are honest and your girls are blessed to have a mom like you. Be blessed.
I wanted to first thank you for the part 1 & 2 tutorial. It has been awhile since I cleaned chitterlings. You did a phenomenal job. I didn't look at another video. Just like Nana. I learned how on the red bucket 45 years ago.
I tried Queenella Brand/Smithfield triple cleaned they were so thin that they cooked in less than 2 hour and were mooshy. My juice was good. But I had to send a bad review to Smithfield. Thank you though because the water after I cleaned them 5 times was so clear you could drink it and my house did not smell at all. Keep up the good job. We need people like you to teach these young people how to cook clean food 🙏🏾❤

Great video! For those of you who cannot find chitterlings during the pandemic in your local supermarket, go to a Korean or International Food Market. They have them but they are fresh and you have to really clean them well which this lady did in part 1 of the video. Happy Thanksgiving 2021 to everyone who is watching!

I made them for my husband I cleaned them yesterday and cook them today that cilantro and I added fried onions and fresh onions OMG so delicious and tender bring them to boil for the first hour then simmering for 3 hrs total cooking 4 I follow the steps the best recipe thanks

You’ve done a very good job of explaining how to cook and clean chitterlings,I never leave comments on post . However I tried this recipe today with the red bucket ( which surprisingly wasn’t as bad as I expected it to be lol ) and there was absolutely no smell . My chitterlings was so clean you could almost see through them. I added in brushing across each one to clean them more . However this was awesome! Thank you
