    I didn't notice at first that you didn't put in seasonings. I'm amazed. I'm pretty sure that if I try to make this soup I'd have a nervous break down trying to control my impulse to season as I go.

    European cuisine... Nice! 🥰 Here in South Jutland we have a soup very similar to Caldo Verde (or Caldo Gallego... same thing really). It has the glorious and magnificent name "Grønkålssuppe" - which translate directly to the plain and boring "Kale soup" 😄 It is an old Norse winter soup and has stayed mostly unchanged since the Vikings made it. No beef, just pork (mostly shanks, bacon/pork belly and lightly smoked sausages). Since potatoes are not indigenous to Europe, it doesn't need any and it is actually completely keto in its original form. Must be why the Vikings were so fit and strong! 😉 Thanks for yet another awesome video!! 😊
    ...and oh, small tip. If you add some pureed or very finely blended cauliflower, it will get the potato feeling and viscosity, and look like a regular Caldo Gallego/Caldo Verde. I personally prefer it without, so mine looks very similar to yours. But, just a tip for people who prefer something slightly closer to the "original".

    • @BlackTieKitchen

      Dang, didnt even think about the cauliflower! The thing I really like about these soups is... Theyre so visceral and plain in their execution. I just imagine a bunch of people sitting around a boiling pot of water saying "what should we put in?"
      "Dunno... How about this?"
      "AND THIS!"
      And they just throw a bunch of meats and some grass into a pot lol

      But I absolutely LOVE that image! And I do believe that is an accurate description on how soups and stews of this kind was made the first time round... and the second... and probably the first couple of hundred times. Then someone said, "Sorry Ragnar, or Rollo, or whatever the *bleep* your name is, but I do not think driftwood and spiderwebs are good condiments for this!". So slowly it evolved into something edible and that's the true legacy of the Vikings right there! 😄

    I tried this recipe and I resisted the temptation to add seasoning, except salt. It probably isn't really necessary for most people and to tell the truth I could have left that out. Flank steak is expensive these days. I was shocked, haven't purchased in years. I opted for skirt steak. It was less expensive but a small piece of meat for the cost. I stopped shopping for myself and opted for delivery before the plague because of a broken foot. So I still do delivery. My choice for chorizo meat ended up being ground up concoction and not a sausage. I guess I wasn't paying attention to the Spanish part for sausage. Threw it in anyway. It totally melted away. That is why you don't need seasoning! I totally get it. I also threw in cabbage. Everything else was the same. This is a delicious soup. Even if I did sorta screw it up.😄

    • @BlackTieKitchen
      @BlackTieKitchen  3 ปีที่แล้ว +2

      You can pretty much use any cut of beef really! This soup embodies the "hmm what do we have?" The key is the salt pork (which brings the salt) and the chorizo (which brings rhe spices). Everything else... Is gravy!

    I never had turnips on my low carb radar, thanks! Soup looks yummy! For the last decade I've used the stovetop for all my stocks (bone broth) and soups. The ceremony of filling the house with that smell, conducting the prep work for each step along the way of the long simmer is something I've always been proud of and enjoyed. I got a pressure cooker recently as a gift and am now asking myself, where have I been?!?
