This is currently my favourite TH-cam channel, so thanks for that. I made this recipe last night with a couple of adjustments (only olive oil instead of the butter oil mix, spelt penne, a different sheep cheese, as I don't have pecorino, and pumpkin seeds instead of almonds, as I am allergic to nuts), and I just ate it for lunch. Of all the chefs I've seen on this channel this old master is one that I'm drawn to the most. His cooking looks so easy but it seems to explode with flavors. The way he prepares the food makes it a no nonsense, no frou-frou, no hassle way of cooking that draws me in. Plus who doesn't love Italian cooking? I don't want tv but I'm surprised this old man never had his big cooking show.

I love listening to Gennaro~my Nona was from Italy, but lived in the UK for half of her life and she had that same sweet italian/british accent going on~~she's passed on and it's a nice sound to hear again. :-)
I suspect it is. I can't imagine many authentic Italian recipes would have used an oil & butter blend. Anyway, Bertolli tastes DISGUSTING, and is far inferior to just olive oil.
Even though I cringed every time he used that butter blend, I was still drooling over this dish at the end! I must say though, if I walked into Gennaro's kitchen, I highly doubt there would be any Bertoli products in the pantry. If anything, his olive oil and butter would come from a local Italian farmer who lives down the street. Just saying....

It's not about money, it is about the presentation. I personally think that most of the sponsored videos are too "in-your-face", and often have little to do with the channel itself. However, this one makes sense, and the footage showing off the product only lasts 2 seconds. And I like Gennaro.

I tried your tuna and caper pasta recipe last time and it was simple and delicious! I can't wait to try this too..would have never experimented with these ingredients for pasta.

I clicked the LIKE button even before watching this video. It contains Genaro and Aubergines and I haven't been disappointed. 💛 Well I simply replace that Bertolli crap with a good olive oil though. Butter just makes this dish taste dull which is a bad contrast to the fruity flavor of the fresh tomato.
Of course there's product placement. It's sponsored by Bertolli. Product placement or not, his recipes are incredible ! I've tried a few of them , and they're basically very simple , so even a rookie like myself can make delicious dishes ! Thank you Gennaro !
This looks really delicious. Such a nice use of humble ingredients. I guess the only thing I would change is to roast tomatoes and a couple of cloves of garlic along with the aubergines but that's just a personal preference. Thanks Gennaro.
Thanks Gennaro, just made this. It was delicious. I didn't have tomatos for the end so I just crumbled up some goats cheese to dash some deposits of a tangy pallete cleanser, and actually i'd probably just do that again, worked perfectly. Glad I did that instead of skipping out on that step entirely though. I feel like the dish would've been a bit too heavy without that thrown in there, so thanks for mentioning why you put the tomato in!
If I hadn't already bought stuff to eat for the next three days, I would eat this tomorrow. But hell I can just freeze my broccoli soup and make this instead :d Can't wait to try it hehe!! You're the best Genaro !!
These roasted Aubergines are really great. Instead of Almonds i have roasted Walnuts with garlic and little chili in a pan. Than added The tomatoes with butter. At the end the aubergine paste, basil, pecorino and pasta water. Another great gennaro dish with lots of flavour.

I think this might be a little bit too dry. A few more teaspoon of butter will help. Maybe bertolli butter WITH olive oil might be good, just saying.

Recipe is great but I will be using a good quality olive oil, no hydrogenated vegetable oils or trans fats for me!
