Ingredients:
- 360g (1 3/4 cups) arborio rice
- 500g (8oz) vine or cherry tomatoes + 6-8 tomatoes for garnish
- 1 yellow onion, diced
- 1400ml (6 cups) veg stock
- 50g (1/2 cup) grated parmesan cheese
- 5 cloves garlic, minced
- 2 tbsp (30g) butter
- 2 tbsp olive oil + 2 tbsp for cooking
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp ground paprika
- salt, pepper
- 2 tbsp fresh parsley
