  • Arancini
    Ingredients
    - 1 brown onion, diced
    - 4 cloves garlic, minced
    - 3 tbsp olive oil
    - 400g arborio rice
    - 200ml white wine
    - 1L chicken stock, hot
    - 3 tbsp butter
    - 50g grated parmesan
    - 200g low moisture mozzarella, diced
    - 2 eggs
    - 50g flour
    - 100g bread crumbs
    - olive oil for frying
    Method
    1. To make the risotto base, start by heating the oil in a large, shallow pan and adding the onions, season well with salt and cook until they go translucent - about 5-6 minutes.
    2. Add the garlic and continue to cook for another two minutes, stirring frequently.
    3. Next, add the rice to the pan and stir through the onions and garlic. Cook the rice like this for 3-4 minutes before adding your glass of white wine. Reduce the white wine until it's almost gone.
    4. Working one little at a time, add the hot chicken stock and continue to stir. Don't add any more until the last level has evaporated. Continue until you use up all the chicken stock.
    5. Now add your butter and Parmesan, and stir through well. Take the cooked rice and place it on a tray and in the fridge to chill.
    6. Divide the rice into 8 even piles and form the rice into a flat patty shape. Add one piece of the mozzarella to the centre and cover it completely, so you end up with a rice ball with a piece of mozzarella in the centre.
    7. Next crumb, your balls in the standard flour, beaten egg, then bread crumbs. Place them in the fridge for about an hour to firm up.
    8. In a small pot, heat your olive oil to 150°C and carefully add your Arancini and cook for 8-10 minutes or until golden brown. You want to cook them slowly so the rice has time to warm through and the cheese in the centre melts.
    9. Serve with some tomato marinara sauce and enjoy!

      @@johnweek5677 Define "serious dish". Where I am, Andy's dish, a nice rice ball with cheesy center, is usually found in pizza restaurants. Sometimes you can get them in upscale places but they zhuzh them up with things like truffles and such.

    More like " Supplì", arancini in classic version have bolognese sauce inside! And rice is flavored with shaffron! Anyway a good job as usual, chef! 😊

    You are a great chef, you always execute everything to perfection, I love your videos. I am also a Sicilian chef, and I can tell you that you have made the arancini correctly, but one fundamental thing is missing, the sauce of the filling, the arancini have the sauce and the meat inside

      I agree as a half Sicilian... the "sugo" (kind of a thick bolognese sauce with peas in it) is missing...!!! But there are some more variations of Arancini... and they're without sugo... for example, with bechamel, prosciutto and Mozzarella... soooo good!!
      And there are even sweet versions since... 😊

      Usually the small one's are frozen, they need to be that size so that by the time that the outside gets golden the heart of it gets heated otherwise is they are bigger at the heart the mozzarella or whatever ingridiend you choose to fill will be stil cold and is not the best way to eat it.

      Nah the actual Italian recipe requires for the rice to be cooked in broth, also it doesn't have a lump of cheese in the middle, the cheese flavor is already provided by the parmesan in the rice. Also instead of being dipped in tomato sauce, they actually get filled with ragu (tomato paste + tomato pulp + parmisan + macinato + soffritto) and peas before being fried so think of it more as a rice meatball

      Also the filling can widely vary: in Palermo and Erice the sauce has a higher meat to tomato ratio, in Messina and in other parts of the south a more runny ragu with broth and minced meat is used, and the cities closer to the mountains even add mushrooms.

    Chef, I am Italian, you did a wonderful job 😍😍 for the next time I would suggest, instead of parmesan you can put mozzarella and a sprinkle of saffron in the rice. Also we don’t dip them in salsa, just eat them while warm as they are… but these look delicious too, keep doing this great videos ❤️

      ​@@manlikemars2929 Salsa just means sauce in Italian it just refers to any sauce. Usual Italian fillings for arancini include Spinach and Ricotta which is my personal favourite

    In nyc area we put ground cooked meat, peas and cheese in large rice balls.
    In small rice balls we mix the cheese into the rice.
