The air handler has a variable speed blower motor also know as an ecm motor some condensers have ecm motors also, typically when you have two stage cooling. Depending on the temperature at the thermostat and what the differential is of what temperature your calling for the unit will either slow down or rev up to get you there more efficiently
No one answers the golden question on any hvac videos about multi speed ac. How do you size variable speed in contrast to single stage? You mention 88 degrees as your baseline with a single stage and yet never mention any baseline temp for sizing multi speed units. My theory would be to base the avarage daily summer temp on the sweet spot of the particular unit. Then if you were to get 100+ degree days the system would ramp up and be able to adequately cool the house. The problem is i dont see anything from the manufacturers on this subject unlike furnaces the have multispeed they actually put out tge btu of the various stages not so with ac. So how are you guys sizing these multispeed/variable speed units in contrast to single speed?

A 2 stage does not dehumidify better than a single stage. Only benefit of a 2 stage is less power usage.
The 2 stage allows the AC to dehumidify for a longer period of time allowing a more comfortable home
An AC does not replace the need for a dehumidifier in some areas
