You shouldn't get a hum, since the neck and middle are + and +, but when one is out of phase it's - and + or + and -, so you should have no hum, simmilar to a mid-position on a stratocaster. Maybe it's your amplifier, or grounding, or shielding?

How do you get your guitar to harmonic like that when you bend? do you need a red special to do so? or is it a technique?
JakobC its the neck and middle pickup turned on and out of phase, it cancels any low harmonics so you get that really high harmonic rich tone !
