Hello Mike, I just came from Manila, after watching your video I bought myself a ticket last Tuesday and went on a mini 3 day fud trip. I just stayed in Ortigas because I love Podium is just across my hotel...I wanted to go to Ongpin too but did not make it, next time I'll go but I got delicious fluffy siopao at Circle K. Even their pandesal with corned beef were really good! At NAIA we went to Ka Tunyng's Cafe and their food were surprisingly awesome, I was even surprised with their Gulaman icy drink it was refreshing and they captured the original taste from the 70's. The modern GULAMAN/sago icy drinks taste is very different...I was craving for milk fish Tinapa and had it at Pancake house joined the MALAYAN plaza in Ortigas, it was really smoky and milky tasting [the fish meat].Back to NYC last night and back to work!

Just my opinion, we don't have a strong restaurant or street food culture in the Philippines compared to say Thailand or Vietnam. Ask any local, we prefer simple and cheap home-cooked meals I highly recommend asking a a local from any province to cook for your group or tag along to a barangay (ivillage) fiesta.

We have two very good Philipino Restaurants here in Fresno California. One has changed hands but before it did it had a marvelous relish that they sold to go with the Lechon on Sundays--I wish I could remember the name of it, but it was SO good.
We love the best of Eng Bee Tin for the home of Hopia, Tikoy and others at Manila Chinatown in Binondo, Manila, Philippines and we love to tasty today.
Bruh can get a porkchop and fry it in Texas for a 2$ probably xD beats the air fare lol I mean where I stay can get a thin chop like that for less than a dollar because it doesn’t look even a lb of meat and goes usually 1.25-1.50,1.75 a lb for pork where I stay. That small chop is probably not even a third of a lb then factor cost of seasoning and spice/citrus (can get hundreds of uses out of big spice mixes) and oil probably 2$ total for all if you can shop and cook for yourself right :3 But I agree used to live in Malaysia so everything being 1/3 the price to buy to eat or drink and street vendor food being like a dollar everywhere to fill yourself up on skewer, kebab, pineapple fried rice etc the endless list of street food from Thai, Chinese, Singapore, Indonesian, Indian etc so forth. My retirement will be there if there is a non politically divisive state for me to lay my head in at that time xD

sir you did the right way of eating your noodles together with your siopao... we also do that as well, and sometimes, instead of siopao, we replace it with dimsum like dumplings or siomai and they also go well with the noodle soup

All i know is that cantonese has a mild flavor. Hunan and szechuan have spicy flavors. But szechuan has is more flavorful for me compared to hunan.

They reduce the coconut milk while continuously stirring until the milk turns into curds and oil. What you saw on top of the rice cake was the curd

We have two very good Philipino Restaurants here in Fresno California. One has changed hands but before it did it had a marvelous relish that they sold to go with the Lechon on Sundays--I wish I could remember the name of it, but it was SO good.

Bruh can get a porkchop and fry it in Texas for a 2$ probably xD beats the air fare lol I mean where I stay can get a thin chop like that for less than a dollar because it doesn’t look even a lb of meat and goes usually 1.25-1.50,1.75 a lb for pork where I stay. That small chop is probably not even a third of a lb then factor cost of seasoning and spice/citrus (can get hundreds of uses out of big spice mixes) and oil probably 2$ total for all if you can shop and cook for yourself right :3
But I agree used to live in Malaysia so everything being 1/3 the price to buy to eat or drink and street vendor food being like a dollar everywhere to fill yourself up on skewer, kebab, pineapple fried rice etc the endless list of street food from Thai, Chinese, Singapore, Indonesian, Indian etc so forth. My retirement will be there if there is a non politically divisive state for me to lay my head in at that time xD

sir you did the right way of eating your noodles together with your siopao... we also do that as well, and sometimes, instead of siopao, we replace it with dimsum like dumplings or siomai and they also go well with the noodle soup

Mike I very much enjoyed this episode of your quest for great food. Nothing fancy just simple great food that costs pennies on a dollar compared to US prices. I have a lady friend of Philippine decent that I am considering taking with me to to the Philippines. She is a wild girl and would not in any way inhibit things I was interested in besides food.
