Dryad's Saddle: A Versatile Edible Mushroom

  • In late Spring, through early Summer, most foragers are out looking for morels, ramps and tender young greens.
    But let's not forget about one of the best and often, most overlooked, wild edible mushrooms: Dryad's Saddle AKA Pheasant's Back. This giant fungi grows directly from wood in a matter of days. If you're not quick, they can get too tough to eat fairly quick. However, the reward for those who get to them within a few days is working with one of the most versatile wild mushrooms in the kitchen.

    I have this mushroom grow in the back of my property every year but I never knew they’re edible. This is very good to know

    These are really only good when young. The larger ones are too tough for me.

    Too bad I walked past a bunch of these along a creek this past spring turkey hunting without any idea 😭 lol
