The tutorial missions (except for the actual tutorial, the Maiden Voyage) don't put you on private servers; however you were on Safer Seas (private servers) because you came out of the maiden voyage.
Generally speaking there are two modes, Safer Seas and High Seas. In Safer Seas it's just you and your crew, but any items you sell are only worth 30% of their normal value, you can't level up with any faction past level 40, and a bunch of things are not available. High Seas has other players, but everything is available and you earn full rewards. Safer Seas is good to learn the game in peace and for certain Tall Tales (story missions) and commendations (achievements, often tied to rewards). Otherwise you'll probably want to sail on the High Seas.
Your first major goal should probably be buying your own ship (specifically, a sloop, unless you have at least 2 friends you play with consistently). Not only does that allow you to save cosmetics to your ship so you don't have to set them again each session, you can also buy supplies from the shipwright and most importantly, sell to the Sovereigns. Sovereigns are a faction that only deals with Captains (people on owned boats), but they take (almost) any loot and deliver it to the corresponding traders for you, free of charge. What's more, they are positioned in small towers with harpoons on top, making unloading and selling your loot a breeze. No more running over the island with each piece of loot! (Owned ships and therefore Sovereigns are not available on Safer Seas)

Just finishing up the video in the morning and a few more comments:
-The push-to-talk can take a while to recognise the mic; keep trying to use it and eventually a green speach bubble should appear in the top right corner to show that the game is picking you up. To my knowledge that should work in safer seas.
-There are very few things that give you mechanical advantages; for the most part a new player has exactly the same tools as someone with thousands of hours. All cosmetics are purely cosmetic; though some of them (the ones you can't currently buy) show what you have achieved in the game; they are tied to commendations (achievements) or were given out at certain points in the past and are no longer obtainable.
      Here's what has mechanical benefits:
-Owning your ship lets you sell to sovereigns, as discussed in the previous comment.
-Emmissay flag licenses can be purchased once you hit level 15 in a faction. This then allows you to raise an emmissary flag on your ship (as often as you want, and for free). Emissary flags level up when you pick up loot for the corresponding faction for the first time, and when you put it on your ship for the first time. The benefit is that when you sell said faction loot with a flag of grade 2 or higher, you get bonus money and reputation! At the maximum grade 5, you get a 150% bonus, so 2.5 times as much as normal. The disadvantage is that when you sink you drop a broken emmissary flag, which is valuable loot especially if it's a high grade flag, so it makes you a target. Additionally, a grade 5 emmissary for the Reaper's Bones can see all ships flying an emmissary on the map (all Reaper's Bones emmissarys are visible on the map for everyone, alongsides the grade of their flag)
-Becoming a Pirate Legend (by reaching Lv.50 in three factions) unlocks an entirely new faction, including new cosmetics and new quests.
