I actually pour the cocoa powder with cinnamon into a strainer then dust into the milk. It's slower and gives a better incorporation (zero clumping). Did this as it works with macadamia or high fat almond milk as a lactose free version. I find using any bar above 65% dark chocolate makes the mix uncomfortably bitter.

No it doesn’t. it’s very high in fat, that is what makes it filling. this recipe puts a whole chocolate bar into a cup of milk (also high in fat). Plus sugar. That is a boatload of fat and sugar calories and zero fiber.
I have also often made it with zero sugar. Yep. It’s good! It has a vague sense of sweetness that works for me. Sometimes I have added just a touch of honey. But at one time I loved it with no sweetener at all. Nice to know I’m not the only one!

Seeing people say this turned out a bit too bitter due to the dark chocolate, maybe try 60% instead. To me and many of my friends, that has been the sweet spot for homemade hot chocolate.
As a french guy, I had multiple times the opportunity to drink hot chocolate from my grandparents, and parents. And we never add cinnamon or salt (!!?) or vanilla. Same in parisian restaurant/bistrot/coffee shop. I suppose the title "French hot chocolate" is some sort of clickbait ! Anyway, this recipe is still pretty good :)
Instead of wasting chocolate powder by adding to hot milk and later straining, simply add the choco-powder at the very beginning and keep stirring. This way you won't have any chocolate lumps.
A goated way to make it sweeter cuz it tastes a bit bitter is adding milk chocolate instead of dark chocolate. Also don’t add any sugar then cuz it’s already really sweet.
You could also serve a mug of hot milk and/or cream along with a chocolate bar 🍫 of your favourite chocolate allowing the guest to drop the chocolate bar into his own cup of hot milk thus enhancing the experience.

I tried this exactly the same way and used 100% dark chocolate around 50g. Added 2 tbsp sugar to it. Tasted really good.

I find using any bar above 65% dark chocolate makes the mix uncomfortably bitter.
Also, I would add the vanilla at the end when melting the chocolate so you lose less of the volatile vanilla compounds.
