I made your hot chocolate today, and though I was hopeful yet skeptical at first, when I sat down and dipped my croissant into it, it was like my tongue died and resurrected at the Pearly Gates of heaven where angels clothed it in your hot chocolate recipe. It was the perfect drink after I had gotten off of work. Thank you very much, with a recipe like this you can convince an entire warring nation to make peace after drinking a mug of this stuff. This is a little like how us Jamaicans make our chocolate tea, but we use the natural chocolate straight from the roasted bean that we grate into the milk. We add cinnamon as well as nutmeg a lot more sugar and more salt. You can use cows milk or freshly squeezed coconut milk. The result is a sweet and savoury chocolate with all the natural cocoa butter, which can burn your tongue if your not careful! It’s literally the nicest tea I’ve ever tasted. But this way looks easier, I’ll try this.
One suggestion I have is to not add the vanilla extract until you’ve finished. Boiling the extract can turn it bitter. Now, if you used a vanilla pod, that could be added at the start without risking flavor.
bitterness may be a flavor component you are looking for though, like with the salt - it's not salty, but nontheless an incredibly important addition to something this rich and sweet

This is similar to the way it was served in the 17th and 18th centuries in chocolate houses before coffee became trendy. Back then it was even served for breakfast on cold days, but made much stronger than the milky hot chocolate we make today. PS You don't need to filter this if you make the cocoa powder into a little paste by adding tiny amounts of the milk. By just adding all the powder to the pan he created cocoa powder lumps! When you've made the paste quite milky, add this slowly to the pan. No lumps!
I think more than anything the filtering was to remove the foam and skim off the excess milk fats that float to the top from the reduction process (don't quote me on that though - just my educated guess). Still have a fair point about the cocoa clumps though :)
Pretty sure that was more for the clumps and skin that form on heated milk more than it was for the cocoa powder lumps. A few seconds with a whisk would be good enough to get rid of cocoa powder lumps, but wouldn't do anything for the milk solids.
I made this and it tasted HEAVENLY! Tweaking the recipe a bit, I added a few slices of orange peel to the milk while it simmered in order to give it a bit of a chocolatey orange taste. I also used 50% chocolate instead. It was like Terry's chocolate orange hot chocolate. Very rich, thick and the perfect sweetness.
Was able to find every ingredient at my local whole foods except for the most important ingredient: was unable to mimic the outrageous French accent therefore my chocolate sucked.
Oh well actually the way someone speaks actually has no impact on the quality of something being cooked, so that's good and reason enough to try it again.
I did a home stay in France about 9 years ago and my home stay mom made us this for breakfast. I’ve thought about it for years because it was so thick and amazing. So happy I can now recreate it 😍

The beans are fermented for 2 weeks and left to dry. Once dry, the beans have turned brown! The dried beans are roasted to create more flavor, and finally, made into chocolate products!
Hehehe...here in Oz on SBS they had an episode of Food Safari where they were shown some French cooking by Guillaume Brahimi. He said in one recipe "...just a little butter...", and I had to double by Lipitor just watching it :P He was also roasting chicken and was rubbing a big knob of butter. Maeve O'Meara asked what he was doing, and he said: "I am polishing my chicken". I've tried that...the chicken skin was really crispy :P
I grew up eating “chocolate gravy and biscuits”. I never knew that it was “French”. Our southern version was fresh, homemade, buttermilk biscuits right out of the oven, cut in half and covered in chocolate gravy. To top it off, I always put a bit of butter on top and let it melt while eating. We didn’t have it often, but it was always a treat when we did.
I remember spending 2 weeks with a french family in my early teens for a school trip.. hands down the best hot chocolate I ever had in my life and still to this day I haven't had anything that beat it... i'm SO giving this a try :D
In my country, Mexico, we discovered chocolate and invented that drink. Originally it was prepared with cinnamon, vanilla, sugar, chocolate and water. It is a different drink from the French one, which is also delicious. It can be taken hot or cold; it has more chocolate and cinnamon and it does not contain cocoa powder. You are 100% right. Cocoa beans and chocolate originated in Mexico, same as potatoes in South America. The Belgians planted this bean in the African Congo plantations and became famous for their chocolate. But it all came from Mexico and Central America. In fact, you serve a salty chocolate sauce called Mole with your dishes.
I make this recipe for my children. They say it's the best! The salt is very important to enhance the sweetness and I find it also sparks up the chocolate.

I think some ppl have never tasted black chocolate at 70%... it's not sweet as you think, cocoa powder neither, that's why you have to put sugar into the preparation(quantity of sugar is all up to you tho, if you like it really sweet or just a little bit, like in the video recipe), otherwise the whole thing would be bitter. Cajun is US mispronounced 'Acadian ' - from the Acadie region in France 🇫🇷. The people who moved from Eastern Canada into the US. Makes sense that your mom with french ancestry made this chocolate. Probably made an excellent bouillabaise as well which would have been called Cajun seafood stew.

Excellent! Such a delicious drink. Thank you! An excellent recipe. Two things to note: 1. If you have to sieve it, you made a hash of mixing the cocoa. Premix with a bit of warm milk before adding to the saucepan. You should not have to sieve it and make it so complicated. Mix it better. 2. Chocolate has serotonin. That is why it feels to good to drink it. You are getting loaded up on serotonin. A nice way to get more of this feel-good chemical, however if you are low on this and crave sweets and chocolate, get more sunlight, sleep, exercise, and proteins. Cravings mean you are really low, and need it from other sources for your health.
I just made some with 99% cocoa Lindt Swiss chocolate. Needs a lot more sugar but it was the only chocolate I had at home. Contrary to most, I actually like it, a small bit at a time. But your recipe is fantastic. I used vanilla pods to infuse the milk and I didn't have cinnamon bark so I used a bit of powdered cinnamon. And I used goat milk since I allergic to cow milk protein so it is is quite strong but good. Merci, mon ami!

I know its 2 years later but just wanted to let you know I did your recipe today and it was fantastic. I didn't have cinnamon barks but I did have powdered cinnamon and it worked well. When strained through the sieve, the cinnamon bits were also filtered out. I'll definitely check out your other recipes.

Though there are no vast and legal terms for hot Chocolate and hot cocoa hot cocoa is usually viewed upon as thinner and using only cocoa power instead of melting chocolate, hot cocoa will also not include other flavouring such as vanilla (which this recipe does have). Also this video is titled hot chocolate not cocoa. Please make sure you're right next time you try to correct somebody otherwise you look a little silly. In 2016 I took my nephews on a trip to visit Paris. I had been an exchange student in Paris in 1971. We visited all the usual places one goes in Paris and we ate in a bistro near where I had lived while a student. Both of the boys tried this version of hot chocolate and were completely enchanted by it. I have now shared its recipe with them since all the years since that visit they have both wished for a way to recreate the recipe.

As an American, I am fortunate enough to have grown up in California. So I've had all of the major forms of hot chocolate. Plus I've had elevated hot chocolates at restaurants that are decorated with whipped cream and churros and cookies and so on. At this point, I don't think any are superior to one another. Mexican, French, Italian, Swiss-German, or just plain ol' powdered Nestle. It really just depends on what each person likes. It also just depends on the ambiance. The best coco I've had was from a packet my mom zapped in the microwave. Also I think it's a common misconception that good coco is thick. A thin coco made from a blend of different chocolates is honestly quite refreshing.

However, dark chocolate or raw cocoa nibs have 0-maybe 6 g of added sugar, if you’re buying 80-95% cocoa. I'm Venezuelan and I used to buy hot chocolate like this in a churrería. My friends used to say we needed a spoon, it was so thick XD I loved it, my dad used to make chocolate like that for dinner, we ate it with lots of bread and butter (he was Spanish)

I've always been a big fan of using powder and solid chocolate. Just the former tastes fine, but lacks a bit of richness. Just the later often ends up without enough chocolate flavor. Though I like to cook a portion of the dairy and all of the sugar together to form a sort of Dulce de Leche. It's less sweet than sugar (though I start with more sugar, so it all evens out) but very complex and quite good.
We use this recipe for the weddings at morning time, but we put a little bit of butter in the mix. I don't know if it is to make it a little robust, or for the pinch of salt of the butter, but it tastes so good. Chocolate de bodas.
I appreciate how little sugar this uses compared to other recipes. I've found so many others that use sweetened condensed milk on top of the chocolate and much bigger measurements of sugar.

i tried this and it was so yum! I also liked how it wasnt too sweet, and having a buttery soft brioche is perfect. I dont understand people that eat and drink sweets together. Either have a cookie with sugarless tea or coffee or have a sweet latte or hot chocolate with a buttery (non sweet) treat like a croissant.
Lol I'm French and I've never seen anyone doing that neither at home nor in restaurant hahaha, I think you must go to expensive/chic places to get a hot chocolate made like this and even there I'm not sure you will get cinnamon in your chocolate, not really popular in France. However, my father is Spanish and in Spain indeed you can taste a lot of hot chocolates made like these (and you get churros to eat !) :)

Water cocoa with nice quality water is good if you got intolerance to lactoserum, better to savour cocoa natural flavor, if you use tap water it will taste like shit.

As a best friend that’s french, her hot chocolate is literally just milk and cocoa powder in the microwave. It’s sort of the same concept in England. We don’t sit around at 3pm having ‘afternoon tea’ eating crumpets and drinking tea (although we do love a good ol’ cuppa (had to add some British slang in there I’m sorry)). Afternoon tea is something that usually only upper class people have.

My great grandmother was french. My grandmother fixed this for our breakfast. We ate it thin with bread and butter. Since I'm from the South and we have what we call chocolate gravy (which is served thick) I always thought grandma just didn't like it thickened. I like it thin. So, maybe we were getting a bit of our heritage every morning for breakfast and had no idea.😊
In the end, there's butter near the cup of chocolate. Usually you have to add it on the brioche and then you put the buttered brioche in the chocolate and you eat.
To be honest, everyone who speaks or tries to speak English has an accent no matter who and where he/she is from even the Americans, southerners have the heaviest, African Americans do too hv more difficult (mo for more, etc); Australians are way out of the usual (amaaizin for amazing), the British are so diverse they're tough to decipher and their accent is so regionally different from one another (fain for fine), the subcontinental Indians (very old English with a ball in cheek), the German speaking English is out of the ordinary since not many Germans speak English unless outside Germany. The heaviest English accent is The Chinese trying to communicate in English but they're getting better. The nice thing one notices these days is that so many people even in their own country try to speak English, no more French or Germans insisting on speaking their language inside France or Germany with tourists, an admirable trend getting even better year after year. Finally English has become the global language unifying people everywhere, no matter the origin of people. We hv grown to accept whatever accent people hv as long as we can understand each other (which is the whole purpose of language in the first place). I think his accent is the cutest. World Internist

If you liked this video, you may also want to know that there are a number of steps to making chocolate! First, cocoa beans are picked from the tree. At this stage, the beans are white and gooey. The beans are fermented for 2 weeks and left to dry. Once dry, the beans have turned brown! The dried beans are roasted to create more flavor, and finally, made into chocolate products!

I grew up eating “chocolate gravy and biscuits”. I never knew that it was “French”. Our southern version was fresh, homemade, buttermilk biscuits right out of the oven, cut in half and covered in chocolate gravy. To top it off, I always put a bit of butter on top and let it melt while eating. We didn’t have it often, but it was always a treat when we did.

In my country, Mexico, we discovered chocolate and invented that drink. Originally it was prepared with cinnamon, vanilla, sugar, chocolate and water. It is a different drink from the French one, which is also delicious. It can be taken hot or cold; it has more chocolate and cinnamon and it does not contain cocoa powder. Was amazing.
I think some ppl have never tasted black chocolate at 70%... it's not sweet as you think, cocoa powder neither, that's why you have to put sugar into the preparation(quantity of sugar is all up to you tho, if you like it really sweet or just a little bit, like in the video recipe), otherwise the whole thing would be bitter.

I tried French hot chocolate at my local French festival recently and couldn’t get enough of it! Just made this without cinnamon cz i misplaced it somewhere but still it was so fantastic! Thank you for sharing this recipe! Also didn’t have brioche but I made some crepes to dip into this amazing drink and it was to die for 💕 perfect for a cold winter in New Zealand right now

Two things to note:
1. If you have to sieve it, you made a hash of mixing the cocoa. Premix with a bit of warm milk before adding to the saucepan. You should not have to sieve it and make it so complicated. Mix it better.
2. Chocolate has serotonin. That is why it feels to good to drink it. You are getting loaded up on serotonin. A nice way to get more of this feel-good chemical, however if you are low on this and crave sweets and chocolate, get more sunlight, sleep, exercise, and proteins. Cravings mean you are really low, and need it from other sources for your health.
I just made some with 99% cocoa Lindt Swiss chocolate. Needs a lot more sugar but it was the only chocolate I had at home. Contrary to most, I actually like it, a small bit at a time. But your recipe is fantastic. I used vanilla pods to infuse the milk and I didn't have cinnamon bark so I used a bit of powdered cinnamon. And I used goat milk since I allergic to cow milk protein so it is is quite strong but good. Merci, mon ami!

I know its 2 years later but just wanted to let you know I did your recipe today and it was fantastic. I didn't have cinnamon barks but I did have powdered cinnamon and it worked well. When strained through the sieve, the cinnamon bits were also filtered out. I'll definitely check out your other recipes.

In 2016 I took my nephews on a trip to visit Paris. I had been an exchange student in Paris in 1971. We visited all the usual places one goes in Paris and we ate in a bistro near where I had lived while a student. Both of the boys tried this version of hot chocolate and were completely enchanted by it. I have now shared its recipe with them since all the years since that visit they have both wished for a way to recreate the recipe.

As an American, I am fortunate enough to have grown up in California. So I've had all of the major forms of hot chocolate. Plus I've had elevated hot chocolates at restaurants that are decorated with whipped cream and churros and cookies and so on.
At this point, I don't think any are superior to one another. Mexican, French, Italian, Swiss-German, or just plain ol' powdered Nestle. It really just depends on what each person likes. It also just depends on the ambiance. The best coco I've had was from a packet my mom zapped in the microwave. Also I think it's a common misconception that good coco is thick. A thin coco made from a blend of different chocolates is honestly quite refreshing.

I grew up in a high school where the student body was about 1/3 Mexican. It's where I first learned about cinnamon hot chocolate. It's heavenly!
I've always been a big fan of using powder and solid chocolate. Just the former tastes fine, but lacks a bit of richness. Just the later often ends up without enough chocolate flavor. Though I like to cook a portion of the dairy and all of the sugar together to form a sort of Dulce de Leche. It's less sweet than sugar (though I start with more sugar, so it all evens out) but very complex and quite good.
We use this recipe for the weddings at morning time, but we put a little bit of butter in the mix. I don't know if it is to make it a little robust, or for the pinch of salt of the butter, but it tastes so good. Chocolate de bodas.
I appreciate how little sugar this uses compared to other recipes. I've found so many others that use sweetened condensed milk on top of the chocolate and much bigger measurements of sugar.
I can't have chocolate because of the caffeine, but I just made this using carob chips and carob powder and it is so delicious! Très Bon!

However, my father is Spanish and in Spain indeed you can taste a lot of hot chocolates made like these (and you get churros to eat !) :)

It’s sort of the same concept in England. We don’t sit around at 3pm having ‘afternoon tea’ eating crumpets and drinking tea (although we do love a good ol’ cuppa (had to add some British slang in there I’m sorry)). Afternoon tea is something that usually only upper class people have.
Exactly we just have a cuppa any time tbh my mum has about 8 cups of tea a day and if I’m good I have about 2 so out kettles constantly going off 😂😂

My great grandmother was french. My grandmother fixed this for our breakfast. We ate it thin with bread and butter. Since I'm from the South and we have what we call chocolate gravy (which is served thick) I always thought grandma just didn't like it thickened. I like it thin. In the end, there's butter near the cup of chocolate. Usually you have to add it on the brioche and then you put the buttered brioche in the chocolate and you eat.
To be honest, everyone who speaks or tries to speak English has an accent no matter who and where he/she is from even the Americans, southerners have the heaviest, African Americans do too hv more difficult (mo for more, etc); Australians are way out of the usual (amaaizin for amazing), the British are so diverse they're tough to decipher and their accent is so regionally different from one another (fain for fine), the subcontinental Indians (very old English with a ball in cheek), the German speaking English is out of the ordinary since not many Germans speak English unless outside Germany. The heaviest English accent is The Chinese trying to communicate in English but they're getting better.
The nice thing one notices these days is that so many people even in their own country try to speak English, no more French or Germans insisting on speaking their language inside France or Germany with tourists, an admirable trend getting even better year after year. Finally English has become the global language unifying people everywhere, no matter the origin of people. We hv grown to accept whatever accent people hv as long as we can understand each other (which is the whole purpose of language in the first place).

I made the recipe recently and OMG! The best chocolate ever made at home and from the girl who seriously hates cooking! @@Alceste-Resister Malheureusement les nouvelles générations de métropolitains sont devenues trop accros aux produits industriels (Nesquik, Banania,...) pour prendre le temps de cuisiner au quotidien. Ils n'y a plus que leur grand-mère qui le font encore(et même là ce n'est pas toujours le cas) 😔😕
Thanks for sharing this! To add to this, there are a number of steps to making chocolate! First, cocoa beans are picked from the tree. At this stage, the beans are white and gooey. The beans are fermented for 2 weeks and left to dry. Once dry, the beans have turned brown! The dried beans are roasted to create more flavor, and finally, made into chocolate products!
I tried this recipe today and it was heavenly. Although I didn't add any sugar but it was a bit too sweet for me. Also I added 1/2 teaspoon of instant coffee
i always put in some nutmeg as well..and sometimes some heat a little cayenne thats a real "hot" chocolate...lol thanks for the recipe
