Japanese/Souffle Cheesecake

- The Japanese Cheesecake is very different from the American Cheesecake. While the American version is creamy and dense, the Japanese version is very light and delicate like a cotton or a souffle, hence sometimes they are called Japanese Cotton Cheesecake or Japanese Souffle Cheesecake. Please watch the video in full so you can learn how it is made. This cheesecake is very fragile. Follow the directions to the letter and you will be rewarded with a beautiful fluffy and soft cheesecake.

Thanks Chef Rose for this recipe! ❤ If I want to make it ube or other flavor, how much flavoring should I put, 2tsps also? Can i also bake it in a diff pan shape like a heart shape pan? Thanks in advance. 😊
For flavoring. Quantity depends on the intensity of your flavoring. Different brands have different intensities Add the amount that you usually add to your regular cake recipe. Yes, you can use another shape of baking pan. Just remember to remove immediately from the pan as soon as it comes out of the oven to minimize shrinkage.

No fan.

No you can't. Cake flour is lighter than all purpose flour so you need to make some adjustments. 1 cup all purpose flour is equivalent to 1 cup plus 2 tbsp. cake flour. Hope this helps.

You could have over folded the mixture or your meringue is under whipped.

Use only the bottom heat of your oven.
what size cake pan did you use? 8 inch or 9 inch
