If you double the recipe and use 2 baking pans, you use the same temperature and time. However if you double recipe and use only one baking pan, you need to bake longer but at the same temperature.

Did you bake it bain marie style ? - which you should not Just wondering because I have never experienced this. Aside from the cheesecake being underbaked, I do not see any reason why it would be watery. Please take note that the baking time given is only approximate because it varies from one oven to the other. Ovens are not created equal. Can you try again?
I do not recommend using stevia because stevia is 200 - 300 times sweeter than sugar so your mixture will lack bulk. It will also be dense and dry. I prefer to use erythritol because it is 70% less sweet than sugar. You can add a bit more sugar to increase sweetness. Taste wise, it will taste like sugar and it has 0 calories. For me, that is best for baking.

Yes you can. I suggest you use a dairy whipping cream.
