  • Check out the delicious cheap eats food tour at the Chrystal Mall located at 4500 Kingsway #2137 in Burnaby, B.C. Chrystal Mall also has some of the best Chinese Food In North America right in their mall food court. We start by visiting the Top King BBQ on the ground floor. Their Cantonese BBQ meats are delicious and tasty. We sample their Chinese Roast Pork and their Chinese BBQ Pork at Top King BBQ Meats in the Chrystal Mall.
    We needed some rice to go with our BBQ meats, so I pick up some Hainanese Chicken with Rice at the Yuan Hainanese Chicken Outlet in the Crystal Mall food court. It was a generous serving of Hainanese chicken with a big serving of chicken broth infused steamed rice.
    Even though I was full, I saw someone eating a huge chicken sandwich. I asked them where they bought the chicken sandwich. It was purchased at the Mad Chicken Outlet. So I ordered one of the deep fried, battered Mad Chicken sandwiches. I went crazy over the Mad Chicken sandwich. It's huge, it's juicy, it's delicious, it's the best chicken sandwich anywhere.
    In the second half of this video, I show you how to make my version of Hainanese Chicken With Steamed Rice.

    HAINANESE CHICKEN AND RICE RECIPE 海南鸡饭
    Learn how to make the delicious ginger and green onion topping, which you can cook in the rice, or serve on the side. This is a famous Chinese Chicken Recipe from Hainan in southern China. This Chinese chicken dish is famous in Singapore, Malaysia and throughout the world.
    To make chicken:
    1 whole chicken
    3 pandan leaves
    3 pieces ginger
    6 cloves garlic
    2 stalks green onions
    2 tablespoons salt
    Rub salt all over the chicken. Put some salt in the cavity of the chicken. Wash chicken with cold water. Rinse chicken thoroughly with cold water. Parboil chicken in boiling water for 5 minutes to get rid of dirt and impurities. Clean the pot and fill with water. Bring water to a boil. Put chicken in the pot with the ginger, garlic, green onion stalks and salt. Cover with a lid. Simmer at low heat for 30 minutes. Shut off heat and remove 3 cups of chicken stock for cooking the rice. With the heat off, cover the pot with the lid for 30 minutes.
    When time is up, remove chicken. Let chicken cool off for at least 15 minutes before cutting. You can also put the chicken in ice water to cool the chicken. You will get a jelly like skin surface on the chicken if you put it in ice water. Cut the chicken with the bone in, or strip the chicken meat off so it is boneless for serving.
    To make the ginger and green onion topping:
    1 1/2 cups minced or chopper ginger
    1 1/2 cups chopped green onions
    1 tablespoon cooking oil
    1 teaspoon sesame oil
    1/2 to 1 teaspoon salt
    Preheat a pan at medium heat. Add cooking oil. Add ginger and briefly stir fry. Add salt and sesame oil. Stir fry briefly. Add green onions and mix well. For more flavour, you can add a piece of skin from the chicken neck to stir fry with the ginger and green onions. Put the ginger and green onion topping in a bowl.
    To make rice:
    Clean 3 cups of rice in cold water. Put rice in rice cooker. Add 3 cups chicken broth. Rinse 3 pandan leaves in cold water. Twist the leaves and put in the rice cooker. Pandan leaves give the rice a sweet taste and fragrant smell. |You can also add 1/2 a cup or more of of the ginger and green onion topping to cook in the rice.
    Serve:
    Cut whole chicken up to serve on a large plate or cut into individual portions to serve on dinner plates. For individual servings, put a few pieces of chicken on the plate, put some ginger and green onion topping on the chicken or serve on the side. Be sure to bring your appetite because you will enjoy eating lots of ths Hainan chicken and rice. Enjoy!

    It just dawned on me...when I used to order a char sau/ fau ngook fon, the fau ngook they always refer to it as roast pig...that's what we always called it 😊

    Very nice Hainan Chicken and Mad Chicken Burger. In the old Chinatown, Ho Ho Chop Suey had a lightly poached chicken with ginger onion dip that was close to Hainan Chicken. They just called it Baak Jaam Guy ( White Chopped Chicken ) It was slightly raw inside, so we used to dip it in hot tea to cook it a little! We looked forward to trying Hainan Chicken on Hainan Island, but found the meat tough everywhere we tried it. They use a different type of chicken and not as tender as Singapore style. McDonald's had a Hainan Chicken Burger a few years ago in Singapore! Thanks for your recipe. Never considered making it at home before!

      Since this video on Hainan chicken, I have started steaming the chicken. I think I posted some videos on streaming chicken. Seems like the chicken stays more moist and tender. I would to try a Hainan Chicken Burger at a McDonald's in Singapore. Do they put the ginger and green onion in the burger? Thanks for checking out my video.

      I never got to try it, but since McD deep fries the chicken with a tempura like batter, it doesn't look like Hainan Chicken rice at all but closer to the Mad Chicken Burger. They do use the same ginger sauce or garlic chili sauce. More accurately it is McChicken Burger with Hainan Chicken sauce,

    Great meal...why do people keep calling it "roast pork"...it's always been called "roast pig" 🤔😮...great recipe....have a great day !!!

      I guess it must be regional but I have never seen it written as roast pig at any bbq store. In our dialect, we call it "foh nguk", which translates as fire meat.
      When I was in Hoiping, people there call raw pork "sao nguk", which translates as lean meat. In our dialect, pork is called "gee nguk" translated as pig meat. I'm adding more to the confusion.

      We speak the Hoiping dialect, which is almost the same as the toisan (taishanese) dialect. Both of our dialects are part of the Four Counties dialect known as "Sai Yip". The other 4 counties were Sunwui (Xinhui) and Yinping (Enping). Thanks for viewing my video,

      Like most Chinese BBQ places nowadays, they need to be consistent.
      The Hainanese Chicken Rice was 14.50, including a drink. Considering most drinks are about $5.00 and up, it's about average. Although another place in another mall it was 12.50, including soup. Thanks for checking out my video.

    The chicken sandwich looked "crazy" man........LOL......get it? Mad=crazy? LOL......I'm sure it's delicious........and I always like my "char siu" with some fat.....I hate lean char siu.......that's only for people who don't know how to eat......LOL..........look at that, look at that......🌶🌶🌶
