      My state fair has that as a topping option. I think you can do regular, apple or strawberry (as in, slices of strawberries and their sugary juice, not a pureé) and some piece of me also wants to say chocolate but don't quote me on that, lol. The apple is my favorite.

    Joshua, thanks for bringing us funnel cakes! I was laid off in the early 2000s and worked at a local AAA baseball park making funnel cakes and fried pickles. I love your variants! We used (per management) Crustez pancake mix... Anyway, the funnel cakes were TERRIBLE, until Julia Childs came to the rescue! The key was using a water pitcher with the spout cut just right. THEN, when you are pouring them, draw an 'O' a 'Z' and an 'N' a voila! AMAZING funnel cakes! Went from no lines to the longest lines at the ballpark! Give it a try, home fry!

      @@r0e404 Sorry, this was about 20 years ago, so no photo. From my memory, the original plastic pitcher had a tapered opening and it was cut at about 5/8" wide or about 16mm.

    1st time making funnel cakes & they came out great! I halved the recipe & added some pumpkin pie spice to the batter. Just right amount for 2 adults & 2 young kids. Btw I struggled with my funnel getting clogged so I poured straight from the mixing bowl trying to overlap in lines. Letting it sit patiently & get golden brown was key. My family loved it with vanilla ice cream on top. Thank you!!! 🤩

    Been making cinnamon sugar anything for decades and I've never even once thought to put brown sugar in the mix. I've always just mixed in sugar/cinnamon so I'm definitely trying this next time. Thanks Josh

    To anyone that just wants the recipe:
    Whisk together:
    2 cups or 300 grams of AP Flour
    2 1/2 tbsp or 34 grams of Granulated Sugar
    1 tsp or 7 grams of Fine Sea Salt
    1 tsp or 5 grams of Baking Powder
    In another bowl:
    Two whole eggs
    1 1/4 cups of milk
    Then mix with your dry mixture :)

      @@batmanfan111 It just makes incorporating everything easier. Eggs aren't exactly _hard_ to whisk but they can be finicky, what with gooey clumpy egg whites and various stringy goopiness lol (bet you really want eggs now right?) Adding liquid to unbeaten eggs just makes them slide around in the liquid when you try to whisk them and it's just a pain in the ass. Much easier to whisk them by themselves first, THEN whisk in your liquids. Mixing order matters when baking

    I've had a craving for funnel cake lately (that mix they sell at Aldi tempts me) and I've finally given in and made yours instead.
    Safe to say they taste amazing. So crispy but the inside is fluffy. I did powdered sugar, caramel, and cinnamon sugar. All of them were fantastic.

      I made souffle/normal pancakes and his choco lava cake. The pancakes turned out great and the choco lava cake was not exactly like a lava cake but it was probably my mistake lol. I'm also about to make his smores, cheesecake and krispy kreme donuts.

    Six Flags Magic Mountain in Southern California makes these pretty damn well. It's a tradition to get one just before you leave the park (and there's a line for them before park close). The strawberry jam topping is my favorite way to eat it!

      I thought so, I’ve never tried funnel cakes but thought they look like jalebis. Probably only the toppings are different jalebis have syrup whilst these have cream/ice cream etc.
      I’m Arab but I think we’ve taken zalabiya we call it, from the Indians hehe.

      The town I'm living in (I'm in UK) has a very large Pakistani population, there's a beautiful mosque. But my god, the halva here. They put just as much effort into the texture as they do the taste.

    At my old workplace I worked in the Funnel Cake factory and as a tip in case anyone is struggling with just pouring a swirl into the oil there was a technique posted in the kitchen:
    •circle
    •Crosshatch
    •swirl
    It can help keep it together as a circular funnel cake, hope this was helpful to anyone

    I really wish I could have salt and sugar again. Diabetes and heart issues suck. It's awesome watching you get to enjoy everything though. That strawberry jam sauce looks so good.

      Hey it might be possible, but it won’t be easy. If you’re serious then look into Mark Sisson. He just released a book that might be able to help you. The approach may seem counter intuitive at first but once you’ve been doing it a while it will absolutely be possible to introduce salt and sugar back into your diet

    If anybody has a funnel I suggest using that over the squeeze bottle. I’ve made 20 of these things and have learned there is a reason why the funnel is used in the size of the funnel is important.

    We have something looking a little bit like this in Maghreb: it’s called zlebia. 1 bite = 500kcal but it’s sooooooo good. After frying we put it in honey or syrup until fully absorbed.

    I live in the UK and must admit I’ve never heard of this before.
    It looks like the Indian dessert jalebi which you can also find in the Middle East with baklawa. Just wondering if there’s a similarity? if someone has tried both of them.

      The cooking technique is very similar, I'm guessing the taste must be quite different. But yes we Indians have been doing this for centuries now😂🤦🏻‍♀️

      Totally different. Funnel cake is fluffy inside, it’s deep fried pancake batter, it’s leavened. Jalebi are cooked until crisp and then dunked into a sweet syrup. Both are completely delicious, vaguely circular fried batters, but that’s where the similarities end.

    If you don’t have a squirt bottle, I used to take a ziplock bag and cut an extremely small hole at the end of one of the tips and use it like a piping bag for cakes. It’s a little bit more messy but it gives you almost the same result. I make it at least once a week at home and it’s so much fun :). I’ll try the other versions next time. Thanks for the recipe.

      in Tunisia (and all around Maghreb) it’s called Zlabia and it’s dipped in honey, but I think the recipe is quite different. It just shares a similar look.

      Okay, hear me out:
      Less sugar in the batter, stir in green onion, cooked octopus, and maaaybe pickled ginger, all finely chopped. Fry it as per usual, then top with takoyaki sauce, kupi mayo, and bonito flakes. BAM! Takofunnel cake!

      @@Mike_Dubo That's exactly where my mind was, the batter is similar to a northeast asian pancake. I don't really think that cooked octopus can really fly in an American version with said batter- you would need additional starch or vegetable matter for the gamey-ness of the octopus. I guess mileage varies with your access to octopus, but a reliable process would probably use canned octo.
      For the county-fair version, octopus-style cut hot dogs with kelp and dulse to make a pseudo-healthy seafloor scene that entertains children.
      For a more refined palate, redo a version of fish-and-chips with potato starch in the batter, fried cod and apple slaw on the side.
      For the ultimate high score, make a lobster roll version of what you said, sans octopus.
      This could also be approached as a deconstructed crab cake.

    I first saw your salted caramel recipe on your Starbucks video and I made it at home. It is amazing! I've used it to make all kinds of recipes and I've given it as gifts to friends. I will say that the original recipe was a little too salty for me so I've reduced the salt by about 25%. I've also tried making it with 4Tbls of butter instead of 5Tbls and I find that it's much easier to incorporate all the butter and the finished caramel is just as good.

    I needed a quick desert one night and made the batter but i realized to late i didn't have vanilla extract but i did have Hershey's cocoa powder so i added about a quarter cup and i made chocolate funnel cake. I later made it again after grabbing some Madagascar vanilla extract and added it with the cocoa and it was divine.
