My wife and I picked some fresh blueberries this afternoon at a local farm and made these blueberry pancakes with the blueberry syrup for dinner. They were so mouthwatering delicious! Definitely worth the extra effort. We even have leftover blueberry sauce to spread on our english muffins in the morning. Thank you Josh for this amazing recipe!
I always (always, always) add vanilla to my pancake batter. If I use frozen berries that had thawed, I add that thaw juice to the batter too giving the cake a slight berry flavor.

I often make the IHOP copycat pancake recipe and load up the batter with fresh blueberries. It never fails me. I also love Matty Matheson's pancake method, which involves separating the whites from the yolks and whisking the whites until they're nice and frothy/aerated. Makes them super fluffy. Either way, real maple syrup and butter are essential.
Made this pancake recipe (specifically blueberry) on my 15 min break while I’m working from home. Was missing some stuff so I had to make a few substitutions but holy cow this is easily the best pancake I’ve ever made 1000/10
@@amym5114 yeah! the blueberry sauce for me took a while to reduce so you may want to start it before you even mix your batter, also I was able to sub buttermilk/ whole milk with half and half/ 2%. Make sure your pan is preheated before cooking but otherwise pretty simple!

I worked brunch for many years and my only critique of the pancake batter is: needs about a half cup more liquid, and fold in a few tablespoons of melted butter at the end. Personal preference is no vanilla in a buttermilk pancakes, but works great in plain milk recipes.
Quick tip for the majority who get pancake mix. If you mix your batter with warm water instead of milk, it comes out much more fluffy and less lumpy. Hope you try it, and enjoy!

I like the advice from King Arthur to work in a little bit of malted milk powder to get a bit of flavor depth. I also found a cooperative of small Vermont farmers who sell their syrups together and let me tell you: the taste difference is incredible.
Great video. Keep them coming. Especially love the content where you focus on appropriate technique for prep of constituent fresh ingredients b/c it usually strikes an appropriate balance . I will never do enough volume cooking for a family of four to achieve the technique mastery of a high end prep cook, but you seem to appreciate that when discussing technique and adjust accordingly.

I made pancakes today and thought let me make the cinnamon spread..I didn’t have any cream cheese to make the glaze so I just did the spread..came out great! My son was excited…he doesn’t like anything on his pancakes at all (don’t know how he could eat dry pancakes but it’s him lol ) but the spread was good with him and he loved it! 🙌🏽 thanks for another great video!!
1 question about the recipe. 2 cups of flour is 250 grams, but in your recipe you say 2 cups of flour is 300 grams. I used 300 grams and it came out a bit thick but good, but I am wondering which it should be and if you will update the written version of the recipe?

I’ve been down the rabbit hole with homemade pancakes and these are literally the only ones I would really try to do. Not only does it looks esthetically pleasing, it’s simple!!
Just made these but added a few things. Some dried lavender flowers, some lavender extract, and matcha powder. I kid you not, some of the most floral and aromatic pancakes I've ever eatten. Absolutely wonderful and very filling. Gonna freeze the rest in vaccum bags and toast em another time.

imo when cooking blueberry ( or any fruit) pancakes I pour the pancake mix on the griddle THEN place the blueberries (or any fruit) evenly around the pancake before turning. Each pancake has the exact # of blueberries, etc. I have found that incorporating blueberries into the mix first creates a blue haze around the berry instead of distinct boundary of blueberry and cake.
I have to ask, why don’t you do collabs? You’re a better chef than most people on TH-cam, it would be great to see you collaborate with some other cooking creators

Finally something I am an expert in that Joshua is creating/testing. Sorry to say, Joshua, that your buttermilk pancakes are as ordinary and quotidian as anybody else's on TH-cam; this includes all the French chefs, Martha Stewart, and all the rest of the usual suspects. I've seen them all, amateur to pro - perhaps 50 different cooks, and they ALL have the same mix as you. This is terribly wrong. The ingredients other than the flour for my recipe are all the same: sugar, salt, leavening, whole milk, eggs, vegetable oil. And NO vanilla extract. The secret lies in the flour - or should I say flours, plural. You see, pancakes need multiple different flours to create that special flavor that we old-timers knew as children but has been absent for about 30 years now, so you wouldn't know it. The key is to use not just regular wheat flour but also corn flour and rye flour. Use them in a 2:1:1 ratio (with wheat as the higher primary) Then to this add 1/2 cup buttermilk powder instead of fresh buttermilk. This seems counterintuitive but trust me. You also make the mix far too dry, the end product far too tall and massively dense, which will sit in your stomach like a lead weight. And they risk being underdone because they need to cook much longer than a thinner batter requires; you can have fluffy pancakes that aren't an inch thick. And that's it. The difference is subtle but noticeable. I serve mine with just butter so the flavor comes through. I come by this recipe after my favorite mix was destroyed when the company was sold and I was forced to recreate it. Try it. Use it always as a basis for all other buttermilk pancake variations. You won't be sorry. Thank you for all that you do, kid.

Made these this morning and they were delicious. I used einkorn flour instead of AP so reduced the liquid. I live at 6,300 ft elevation so next time I'll reduce the leavener. With less air pressure, they rise fast then fall a little.
I really like their butter pecan syrup! Would love to see you recreate that and their big steak omelette! That's the only thing I get when I go there... Once every 3-4 years!
this is the first but better where I actually have been on prep for Ihop in the past the major difference is better batter. the batter recipe (I won’t spoil it) is stupid simple, that’s why it doesn’t compare. ihop told us lumps are good and not to overmix bc of air pockets

I made these pancakes and they’re absolutely amazing. The only substitution I made was an eighth of a cup of honey for the quarter cup of sugar because I have a sugar allergy. They were so fluffy and absolutely delicious.
Dunno about sober, but I somehow made my way to the local IHOP at like 6am after easily the worst night of my life and I commend the personnel for their service. We felt and looked like we had just been through hell and they were just so nice to us. Still will try at some point these pancakes, wonder if you have the recipe for the lemon pie ones they have as I LOVE all lemon sweets.
4 years ago I made cinnamon rolls but had no idea what I was doing with the filling and accidentally made something akin to the cinnamon sauce you made. I need to do that again, made rolling the pastry *so* much easier.
my first impression, is that well, I haven't been in America in a very long time, however my childhood memories of ihop from the 1960's ( and very early 70's) is that something has changed. These almost look a wet dough, not a batter. And even later working in breakfast restaurants ( not ihop)... our batter was a pouring batter, in a contraption that with a pull of a trigger released the proper amount of batter. If i wanted something that thick... I would order a waffle...it just isn't my memory of ihop... the old A frame buildings, pancakes and flap jacks are thin... and that's why you got a stack of them. Things have obviously changed while I have been away.
I was so angry when they discontinued the cinnastack! Glad to see they brought it back. Not that I've stepped foot in an IHOP in like 10+ years when I was in my 20s and had the palate and cooking skill of a college student.
PAPA/ UNCLE JOSHUA!!! I don't know if you've seen these but, Jimmy Dean's makes this product called breakfast nuggets. Apparently stores are on a shortage and I had a craving just now to make some for breakfast. Sadly there isn't a good recipe out there and I was hoping that if anyone could make these it would be you. And not only just make them, but make them better. I know it's a simple recipe of sausage, eggs and cheese than coated with flower. But I know if anyone can make these, you can make them, but better.

Or what about a series where you take recipes from either a meal planning service like eMeals (which is all from scratch) or a home delivery kit like Blue Apron (with the ingredients and recipe they provide) and make them better. So we can make them better.
So, SO glad that you used REAL maple syrup. The moment I saw it, it was obviously going to be the winner. Now, depending on where you live, real maple syrup may not be available, or may be way too expensive, but if you've never tried it before, you have to. And then you'll hate corn syrup just like everyone else.

The difference is subtle but noticeable. I serve mine with just butter so the flavor comes through. I come by this recipe after my favorite mix was destroyed when the company was sold and I was forced to recreate it. Try it. Use it always as a basis for all other buttermilk pancake variations. You won't be sorry. Thank you for all that you do, kid.

Made these this morning and they were delicious. I used einkorn flour instead of AP so reduced the liquid. I live at 6,300 ft elevation so next time I'll reduce the leavener. With less air pressure, they rise fast then fall a little.
I really like their butter pecan syrup! Would love to see you recreate that and their big steak omelette! That's the only thing I get when I go there... Once every 3-4 years!

Your pancakes look and sound a lot better than IHOP for sure! Then again, everything you recreate looks way better than the original counterparts. Keep up the great work Joshua!! When I make pancakes it is so similar to what you are doing but just a slight difference. If you ever get a chance look at my pancake video. I can't claim ownership for the recipe but wow it is so good.

I followed the recipe to the letter, and I was AMAZED. So much better than IHOP. And you have to know that pancakes and waffles are my favorite food on cheat days. Now they will be even MORE favorite. Thank you, man! You're awesome!

Can you store the cinnamon mixture and icing in the fridge for a few days? I’m guessing you can…. This would be great to make on a Sunday night and just throw it all together for breakfast during the week
I reckon yeah but they’ll probably stiffen up a bit so will need time to come to room temp/the slightest microwaving
I made these pancakes and they’re absolutely amazing. The only substitution I made was an eighth of a cup of honey for the quarter cup of sugar because I have a sugar allergy. They were so fluffy and absolutely delicious.
Remember…for that extra FLEX you can always add 1/4 cup of sourdough discard to the batter.
Dunno about sober, but I somehow made my way to the local IHOP at like 6am after easily the worst night of my life and I commend the personnel for their service. We felt and looked like we had just been through hell and they were just so nice to us. Still will try at some point these pancakes, wonder if you have the recipe for the lemon pie ones they have as I LOVE all lemon sweets.

4 years ago I made cinnamon rolls but had no idea what I was doing with the filling and accidentally made something akin to the cinnamon sauce you made. I need to do that again, made rolling the pastry *so* much easier.

Homemade recipe = One cup milk, one tablespoon white vinegar or lemon juice. Mix and allow to thicken for at least 5 minutes.

my first impression, is that well, I haven't been in America in a very long time, however my childhood memories of ihop from the 1960's ( and very early 70's) is that something has changed. These almost look a wet dough, not a batter. And even later working in breakfast restaurants ( not ihop)... our batter was a pouring batter, in a contraption that with a pull of a trigger released the proper amount of batter. If i wanted something that thick... I would order a waffle...it just isn't my memory of ihop... the old A frame buildings, pancakes and flap jacks are thin... and that's why you got a stack of them. Things have obviously changed while I have been away.

PAPA/ UNCLE JOSHUA!!! I don't know if you've seen these but, Jimmy Dean's makes this product called breakfast nuggets. Apparently stores are on a shortage and I had a craving just now to make some for breakfast. Sadly there isn't a good recipe out there and I was hoping that if anyone could make these it would be you. And not only just make them, but make them better. I know it's a simple recipe of sausage, eggs and cheese than coated with flower. But I know if anyone can make these, you can make them, but better.

Or what about a series where you take recipes from either a meal planning service like eMeals (which is all from scratch) or a home delivery kit like Blue Apron (with the ingredients and recipe they provide) and make them better. So we can make them better.
So, SO glad that you used REAL maple syrup. The moment I saw it, it was obviously going to be the winner. Now, depending on where you live, real maple syrup may not be available, or may be way too expensive, but if you've never tried it before, you have to. And then you'll hate corn syrup just like everyone else.
Made these on my last camping trip. It was a hit! I used the blueberry pancakes with the cinnastack. Omg, so good!
