    We only use our RV for vacation (and probably will stay that way for quite some years), but one of the things that you hit on that I've always loved is the feeling of the RV community. I'm retired AF myself, but it's always fun to pull into a court and start chatting with some of the other occupants only to find out sometimes they are retired military as well - and it's been our experience over the course of the years that branch means nothing once you're retired (other than the good natured pokes), but the wealth of information is amazing. Being able to share back and forth always makes me smile, and hopefully bring a smile to someone else at the same time.

    I love the blitz meal prep. My favorite green Chile chicken recipe is somewhat simpler than yours. I cube 1-2 pounds of chicken (I prefer thighs, but it works just as well with breasts) and throw a 16-20 ounce jar of green salsa with the chicken into a slow cooker. I don’t do any add ins, but you can do that if you like. I haven’t tried it in the pressure cooker, but it should be similar to yours in cook time. I serve it with beans & rice just like a Mexican restaurant.

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว

      We throw this in to the instant pot all the time. It is our 'forgot to lay something out' meal. We throw in frozen chicken with a cup of water for 10 min. After its done I remove the chicken broth (and save it) then throw in the g chili and set the timer for 2 min. If I dont do it separate it will have to much liquid.

Actually, one of the couples we hang out with all the time (Wheelin with the Wendes) was at nomadfest and we never met them. When I met them at the Escapees Bash and I was surprised we never saw them at Nomadfest. But we did melt into the woodwork during that event. We only had about 700 subs and no one knew who we were.

    I watched this video and it inspired me to try this. Saute onions, bell peppers, celery. Cook sausage. Whip eggs. Combine all in the bottom of whatever you wish to bake this in. After that I used Amy Vanderbilt's recipe for muffins and spread the muffin batter over the top. Baked it for 25 minutes at 425 degrees, took it out, spread grated cheese over the top, put it back in for a minute. Rave reviews from the family. Thanks for the inspiration. My wife's picture, not me.

      We love our rig! It is the perfect size for us. We love that when it is open there is plenty of room for company. So far we have had 7 adults sit comfortably in the RV. We have also added a coffee table and there is still plenty of room to walk around comfortably. We definitely do not need to go larger.
      Thanks for watching! Hopefully we will see you on the road someday! Good luck on your search!

    How much did you run the generator to charge your batteries. Your large fridge must use a lot of ah. Thanks, safe travels.

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว

      We ran the generator for one hour in the morning and one in the evening. Occasionally, we ran it at lunch time if I used the microwave to heat up left overs.

    We are enjoying your videos! On your silicon muffin pan link... We've tried to find those pans, but everything we've found is smaller than those... The link you include are not the same pans either... Any help??? Thanks! R&S

    What are you cooking the muffins in?

    • @todayissomeday

      Missy k I used a silicone cupcake mold. In the house I just used a regular cupcake tin. It works perfect for the eggs and meatloaf. Thanks for watching and safe travels.

    Where does Stacey store the Instapot? Looks like a 6 qt model. Storing our 3 qt Instapot is a consideration when looking at floorplans in our research. Thanks.

      It fits with room to spare in the cabinets over the table and yes it is 6 qt.

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว

      Initially, I did not like them until I found a little tip. After washing I do an extra spin cycle and now I love it! It no longer takes over 2 hours to dry my clothes. I have the dual not the combo.

    I prepare meals ahead when we boondock at Oshkosh. I make a double batch of pancakes ahead of time and put some in the fridge and freeze some. Then just cook some sausage and we are gtg. I also do tacos and have done lasagna rolls ahead too. I love the meatloaf idea! That will be a new one on my list. I will have to try the chicken chili. I looks awesome! Love your videos. You two do a great job. My husband and I are both retired Air Force. You guys are just like us with the bantering back and forth. Keep the videos coming!

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว +2

      Food prep was key for us learning how to boondock. I will have to look into the lasagna rolls....YUM!!! We have been together for over 30 years......bantering = love! LOL

    Hi guys! Loving your channel. We too where at Nomad Fest . Do you boondock often? We don’t have a date but are hoping next fall2019 to hit the road FT. My job is remote but I need another year before we can travel. We have been RVing for 13 years. Pop up to 8 year oldFifth wheel for 7 years then We bought a new 5th wheel last spring. It’s getting real. Do you boondock much? We got lucky at Nomadfest and camped right next to Morton’s on the move and Driving and vibin. Thank you for your service!!

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว

      Nomadfest that was our first time boondocking for more than an overnight while traveling. Although since then we boondocked for 4 nights in a row on as we drove from San Antonio to PA. We do plan to do it more often in the future when temps allow.
      Its a bummer we didnt meet at Nomadfest. We really had a great time. Hope you did as well.

    Made it t Tucson a few days ago. Are you coming to Quartzite Arizona for the January gathering??

    • @todayissomeday
      @todayissomeday  5 ปีที่แล้ว +1

      We will be in Havasu for the Escapers Rally and then we will hop over to Quartzite after that. We wont be boondocking at Quartzite though. I am still nervous about that so after 8 days in Havasu I thought we would need hookups. But we will be there! Have fun in Tucson! We cant wait to get out there.

    • @NomadicNative

      You, Me & the RV consider this, boondocking with boondockers is the best way to learn what it takes to boondock & because you’re camping with boondockers you’ll have lots of boondocking resources. It would be like taking a crash course in how to do all of this. RJs Adventures and I have issued an open invitation on our Facebook & TH-cam channels for any to join our camp circle this year, most likely at Roadrunner BLM, we’re avid boondockers, the perfect learning opportunity even if you just wanted to stop by for a visit, you are more than welcomed!!

      You, Me & the RV We will be at the Xscapers Rally in Havasu as well and will be boondocking in Quartsite after the rally. Hopefully we will get a chance to meet. We carry a water bladder to bring fresh water in and a portable gray tank to dump while conserving as much as possible. Hope to see you on the road!
