I’m from Mexico... I know what corn and flour tortillas should taste like. From generations of experience, I can compare homemade to store bought. You missed it! First of all, you’re not cooking the flour tortillas enough. They look raw from the package. If you cook them long enough it brings out the flavors! Guerrero is definitely the best of all those brands. They need to be cooked long enough to allow for some browning and steam puffing in center of tortillas! This truly brings out the flavor! Your Mexican segments of cooking are off, just saying! You need a person that has experience in that genre of cooking to present the real facts, call me if interested, Caucasians are not experts in Mexican cuisine, bring a Latin person to the show 😀
    otherwise, your show is great!

@@satchrocks Not the commenter, and not from Mexico though I've spent some time pretty far off grid down there, but I agree with everything they said. Of US supermarket brands you can get most places Guerrero taste right to me. I like the corn tortillas both, perhaps the white a touch more than the yellow. A supermarket tortilla can never really rival the same thing as a fresh made one, but what you're looking for is just the combination of puffing up and a little leopard spotting. I honestly cringe at the above ATK video. It's not like Mission are horrible but... good is not a word that leaps to mind vs... adequate.

    • @cxa340

Coming from a small town in Central California our family has liked Guerreros tortillas since they started out in the even smaller town of Farmersville. One of the members of their family had kidney problems. Kidney problems means having to watch one's sodium intake. My Mom had kidney illness along with diabetes which meant having to also watch carbs. She didn't eat tortillas daily as many Hispanics do so did pretty well. When tasting Mexican food it should be a rule, if the rice isn't mushy, boiled beans are aren't mushy or hard then the rest of the food should be good with regional differences included. When it comes to flour tortillas they should be round either by rolling them out or stretching them out by hand and if you want to taste test them you taste them warm preferably with a little mantquilla that's butter to you. Your first choice winner can't hold a candle to Guerreros warm or cold. They make several sizes and several styles including a type you should also have taste tested. That's the new type of tortilla put out by several companies, the par cooked that requires the cook to finish it in their comal(griddle). Maybe next time you might try picking the winners of this type tortilla.

You'll want to use a silicone mat, to steam it in the microwave. You can get Chipotle level flexibility and stretch with Los Banditas tortillas. It's easily the best tool for the job in a home kitchen. You want to add water to the outside and shake them off before rolling the mat up, and putting it in the microwave. It's best to have something else in the microwave to have it unroll towards, so it can stay rolled up.

wow! thanks for response...wasn't expecting that:) i have experience with Guerrero flour tortillas mostly, but the corn is also pretty good. although Guerrero flour tortillas look raw, they are technically not "raw" due to some preservatives, but overall a great store-bough tortilla.
i think people shy away from purchasing them because they look "raw". in order to bring out the best flavor of the flour tortilla, you have to cook them long enough on both sides where the tortilla will rise and create some steam between the layers. be sure to use a "comal" (or griddle) or good non-stick pan.... a few brown spots on either side and the tortilla is ready! as you know, heat brings out the flavors! there's another brand even better! not sure if it's availabe in your neck of the woods. brand is "la abuela" (translates to "grandmother")...they are in refrigerated section of most wal-marts and other selected stores. you can find them near the mexican creams and cheeses of store. anyway, i appreciate the opportunity to share my tortilla experience. if you ever need a "mexican" co-host, i'm available. love your show!!!!

Yes, the title is a little bit misleading. None of those brands would rank in Texas but I can sympathize with the Yankees who have three national brands to pick from. Here in North Texas I can go across the train tracks and suddenly I'm transported to Ole Mexico and have many local brands of fresh flour tortillas to choose from. Yep, I'm spoiled.

I am more than reasonably certain that this is a northern test group audience. I can assure you that if it were conducted in a border state such as Texas, where I am, the top two out of the samples pictured would be Guerrero or La Banderita...and likely Guerrero 1st. The top 3 would not make the grade around here for something approaching authenticity(texture, flavor, etc)

We make fresh tortillas every week when we have beans - simple recipe of masa, salt, water, oil your hands, oil the camal, form each tortilla so that it is round and thick like a pancake, and cook on the camal until brown on the outside - this would be the authentic and traditional way to make a corn tortilla and you should end up with a thick small pancake like tortilla.

well if your grocery store has a decent hispanic/mexican section in the refrigerated area walk to there first. This is usually where the mexican cheese is and fresh salsa. Sometimes the operators are smart enough to also carry tortillas that are made with beef tallow. these are very thin but strong tortillas. They must be kept refrigerated. those are the best flour tortillas you can get. my store carries la abuela

I still need to know what the best CORN tortillas are. I recently tried making taquitos and it was a HUGE FAIL! The tortillas, even when heated with a moist paper towel fell apart when I tried rolling them. Those that survived rolling, broke up when I tried freezing them before frying.

    • @bkpathr

Tortillas that are make with white corn, doesn't do well with taquitos. Use yellow corn, first warm the tortilla then roll with fillings. Make sure use small amount of filling in order to roll the tortilla then fry.
