I don’t have a recipe because I’ve just winged it. I’ve made a hot eggplant dip a couple of times and it’s so good. Basically for each large eggplant I roast a medium onion and whole head of garlic with the eggplant in the oven. Then blend them with the eggplants insides in my food processor with some salt, pepper, lemon juice, olive oil and Parmesan to taste. I serve it hot with little crispy bread toasts or fancy crackers.
Is adding parmesan your own twist to the baba ganoush, or is it from a different region that adds parmesan to it? I have never heard of or tasted it with parmesan and was curious.
@@mashal8915 I don’t think it’s technically baba ganoush at all. I just had some eggplants and wanted a hot dip so I made something up. I’ve never actually had baba ganoush either. If I get some good eggplants in the garden this year I’ll try it.
My local Mediterranean restaurant (Pita Inn) makes their baba ganoush with char-broiled eggplant, mashed and blended with tahini, yogurt, and parsley, topped with olive oil and spices and served as a cold dip. So yum! 😋
Ahhh HOMEMADE TORTILLAS!! When I was around 18-19 years old…I went to Mexico with my then bf. I didn’t know how to cook hardly at all. I’d never had a tortilla. This was late 80’s sooo…don’t judge me lol. I (as a woman) was expected to know how to cook so I stuck really close to his mom. I helped cook and grind the corn (holy cow that stuff is a beast to grind! I needed more muscle!) then mix into a dough (masa). I was constantly teased because I’d always make them lopsided lol. We had a cooking stone on the fire that we’d lay them on to cook. Homemade tortillas are so much better than store bought!! Even when there lopsided! Thanks for the memories 💜 Tamara
SUGGESTION: Place garlic cloves in a parchment lined foil pouch (just wrap and seal it around a bunch of them), and roast in the oven at the same time you are baking the eggplants, tastes so good roasted in the recipe!
A friend of mine is from Trinidad and one day when I was over she was making Choka which is their eggplant dip recipe. And while it’s very similar, her “recipe” also included roasting tomatoes and also a whole roasted head of garlic and then just processing the whole mess with the rest of the ingredients you mentioned (salt, olive oil, pepper). I had never had Baba ganoush (sp?) but it was sooo good and I have approximated a version at home for myself. When you don’t measure anything, or the “recipe” you’re following is not measured, each time you make it will be slightly different but likely still good. But maybe try roasting some garlic and tomatoes into a batch and see what you think of it! Thanks for the reminder to me for when my eggplants starts producing! Bless you! I love it with the freshness of the cucumber, but also with the spiciness of a radish, the sweetness of a carrot, and the mildness of a slice of fresh zucchini! How can people not like eggplant--I can't get enough of it...😅
I don't have a baba ganoush recipe, but I have a little story for you: I started making the farmers cheese a while ago, and I also brought some to my parents. My mom got very excited about it, and asked me to send her your video. She's been making the cheese now aswell, and it never lasts long. My aunt also requested your video, but she hasn't been able to make the cheese. My grandma's birthday was on Wednesday, and I made it with herbs, and my aunt got very excited about finally being able to try it. Personally, I prefere stronger tasting cheese, but I now prefere home made cheese over even high quality store bought cheese. Here is to spreading the love for cheese

Yes! This! On the off season, if you actually broil the eggplants, large ones for an hour, turning a quarter turn every 15 minutes, medium ones for 40mins, you can also get that smoky flavor.

Here’s my only suggestion (because this is basically my hummus recipe with the eggplant replacing the chickpeas or navy beans) is when you’re roasting something during hot weather…. Put it in a portable roaster and plug it in outside. Your A/C will thank you. 😄. My husband is in the HVAC business and I’m always talking my about this hack on my channel. IF YOU CAN PLUG IT IN OUTSIDE….DO IT! 😊
Yay! I love it when the garden gives you the thing you're craving, for me it's bruschetta with a big juicy tomato. I live in northern Washington, so I have to wait so long, but it's so worth it. When I can get it, I eat it every day.

I cook that way too lol. I don’t measure anything. Cooking is more of an art while baking is a science. I guess if you want more consistency, it’s good to measure. 🤷♀️. It’s fun to experiment and see what a bit more carrot does to the dish this time around. If it changes it a lot, then you just make note of that. Cooking is a lot more experience than skill though you can do a lot by learning up on skills. But you really just have to do it yourself with your own hands to really get to know how to cook. I’ve been cooking for 20 years now and I’m always learning something new. It’s such a great hobby that is super useful lol.

My favorite recipe of all time was one you made several years ago!! It was sliced fresh tomatoes, sliced eggplant and sliced onions with garlic and olive oil and it was baked. I made it at home and it was AMAZING!! This recipe looks great too and I have to try it!!!
I took a cooking class and we made baba ganoush…I distinctly remember the chef having us add mayo to it. I know - sounds weird - but just an idea for anyone trying the recipe to see if they like it with that flavor in it as well. It was really good

The science of baking is amazing. It's really not that complicated. People make it complicated and intimidating, it's actually not. If you have a friend with a starter they can give you or even purchase a starter, that would be easy. I have a started that i purchased as im fermenting my own. So if you want to start, dont wait. Experiment and have fun.
Yay! I’ve been so curious about how you make yours. I make this all the time. In a similar way, with a few differences. For a smokier flavor I cook them for the same amount of time, but under the broiler, turning them a quarter turn every 10-15 minutes, large eggplants I’ll broil for an hour, no joke. It also makes a softer flesh that breaks up easier, because my Greek grandmother raised in Turkey said, never touch your eggplant to metal, no food processor, or metal bowl. She said eggplant picks up the metallic flavor. I’m not sure if that’s true, but I never wanted to find out. Vigorously mixing it, like you did, with a wooden spoon, after broiling it, makes it less chunky but still maintains a rustic texture. It really is the best thing ever.
The best baba I’ve ever eaten at a restaurant was at a Turkish place in Queens NY. It was so good because it was smoky. I once went there as they were pulling the eggplants out of the ovens. They were charred! That was their secret. It was the broiling that had mine tasting just like theirs.
I have been waiting for this recipe for so long and have made it 3 times thus far. First time I forgot the salt and quickly realized my mistake. Thank you for ending the suspense. I loved it. I am on an eggplant kick because my one plant has single-handedly produced 92 eggplant and counting…..I have also delved into making caponata. You should try that recipe……so delicious!!!!! The recipe I used is from a you tuber whose channel is called sip and feast. I’ll send it to you if I can figure out how. Also, eggplant parm with you tuber Vincenzos plate is delicious as well. I tried it! I love it as a way to use up homegrown cucumbers to dip into it too! Makes me feel great to munch on a dip that is healthy! My husband is so/so on it 😂
I just learned that Chinese egg plant has less seeds and is less bitter. I haven't tried them yet but looking forward to growing and tasting the difference
I grow both Little Fingers (Japanese origin) and Black Beauty--While Black Beauty has a thin skin and is wonderful no matter how you cook it, I tend to use it to mix in dishes. The Little Fingers Eggplant have a hard time actually making it to the dinner table--we cube it with the skin on, roast it with a bit of olive oil, salt, and pepper and WOW--so sweet and gone as soon as we can grab it rom the oven!
JESS, there's a company supporting small farmers of heirloom corn that's been grown for centuries. It's named Masienda. They sell masa harina. Grains and Grit you tube channel just did a video all about them.
I use them in my channel too! It’s THE BEST masa harina I’ve ever had! That’s coming from a Mexican woman who was raised in homemade tortillas household! Even my Mexico born mom agrees it’s the best she’s ever used!

Two things I have wanted to try! I have to share that I carefully seeded an eggplant indoors for the first time this spring, nurtured it, planted it out inside a supportive tomato cage, watched it grow each day, then realized that it was a turnip, not an eggplant. 🙄😂 somehow a turnip seed made it into the eggplant pot. I thought it looked a bit odd. Such a bummer. It was a beautiful turnip though!

In Romania we have a Eggplant-Dip too! It’s called “Vinete”. It consists of grilled, skinned and mashed Eggplant (to the point that the skins are almost burnt),finely chopped onions, homemade mayonnaise (I use a egg yolk, 1tsp of mustard and oil) and salt. Very simple and easy but my favorite. I just eat it on a good slice of bread😍
Great as a side with roasted meat, or vegetarian platter with roasted veg./ Salad/rice/ legumes, use it instead of hummus, and amazing to spread on sandwiches and wraps.

I like to put eggplant on the leftover coals after I grill out and then make baba ganoush. The coals add a nice smoky flavor.

Tried this today! Not generally a fan of Eggplant. But, this was really good! My husband isn't a fan of most veggies in general and he liked it too! Also, I finally broke down and got smoked paprika.. I didn't know what I was missing out on my whole life! Very tasty. Thanks!

My favorite recipe of all time was one you made several years ago!! It was sliced fresh tomatoes, sliced eggplant and sliced onions with garlic and olive oil and it was baked. I made it at home and it was AMAZING!! This recipe looks great too and I have to try it!!!

I took a cooking class and we made baba ganoush…I distinctly remember the chef having us add mayo to it. I know - sounds weird - but just an idea for anyone trying the recipe to see if they like it with that flavor in it as well. It was really good

It's really not that complicated. People make it complicated and intimidating, it's actually not. If you have a friend with a starter they can give you or even purchase a starter, that would be easy. I have a started that i purchased as im fermenting my own. So if you want to start, dont wait. Experiment and have fun.
Yay! I’ve been so curious about how you make yours. I make this all the time. In a similar way, with a few differences. For a smokier flavor I cook them for the same amount of time, but under the broiler, turning them a quarter turn every 10-15 minutes, large eggplants I’ll broil for an hour, no joke. It also makes a softer flesh that breaks up easier, because my Greek grandmother raised in Turkey said, never touch your eggplant to metal, no food processor, or metal bowl. She said eggplant picks up the metallic flavor. I’m not sure if that’s true, but I never wanted to find out. Vigorously mixing it, like you did, with a wooden spoon, after broiling it, makes it less chunky but still maintains a rustic texture. It really is the best thing ever.
The best baba I’ve ever eaten at a restaurant was at a Turkish place in Queens NY. It was so good because it was smoky. I once went there as they were pulling the eggplants out of the ovens. They were charred! That was their secret. It was the broiling that had mine tasting just like theirs.

I have been waiting for this recipe for so long and have made it 3 times thus far. First time I forgot the salt and quickly realized my mistake. Thank you for ending the suspense. I loved it. I am on an eggplant kick because my one plant has single-handedly produced 92 eggplant and counting…..I have also delved into making caponata. You should try that recipe……so delicious!!!!! The recipe I used is from a you tuber whose channel is called sip and feast. I’ll send it to you if I can figure out how. Also, eggplant parm with you tuber Vincenzos plate is delicious as well. I just learned that Chinese egg plant has less seeds and is less bitter. I haven't tried them yet but looking forward to growing and tasting the difference
I grow both Little Fingers (Japanese origin) and Black Beauty--While Black Beauty has a thin skin and is wonderful no matter how you cook it, I tend to use it to mix in dishes. The Little Fingers Eggplant have a hard time actually making it to the dinner table--we cube it with the skin on, roast it with a bit of olive oil, salt, and pepper and WOW--so sweet and gone as soon as we can grab it rom the oven!
JESS, there's a company supporting small farmers of heirloom corn that's been grown for centuries. It's named Masienda. They sell masa harina. Grains and Grit you tube channel just did a video all about them.
I use them in my channel too! It’s THE BEST masa harina I’ve ever had! That’s coming from a Mexican woman who was raised in homemade tortillas household! Even my Mexico born mom agrees it’s the best she’s ever used!

Yeah we do a lot with egg plants in India . Similar kind of dish is “eggplant bharta” we eat with rice or roti too.

Will try this .. thank you.. Tahini is very easy to make if you can't find it in your store. It's basically toasted sesame seeds with olive oil and salt. Your videos always brighten my day!

Two things I have wanted to try! I have to share that I carefully seeded an eggplant indoors for the first time this spring, nurtured it, planted it out inside a supportive tomato cage, watched it grow each day, then realized that it was a turnip, not an eggplant. 🙄😂 somehow a turnip seed made it into the eggplant pot. I thought it looked a bit odd. Such a bummer. It was a beautiful turnip though!

In Romania we have a Eggplant-Dip too! It’s called “Vinete”.
It consists of grilled, skinned and mashed Eggplant (to the point that the skins are almost burnt),finely chopped onions, homemade mayonnaise (I use a egg yolk, 1tsp of mustard and oil) and salt. Very simple and easy but my favorite. I just eat it on a good slice of bread😍
I use roasted or confit garlic in mine and it’s great!

Great as a side with roasted meat, or vegetarian platter with roasted veg./ Salad/rice/ legumes, use it instead of hummus, and amazing to spread on sandwiches and wraps.
