- In this video, I'll guide you through the process of making a smaller batch of delicious artisan bread - perfect for when you're short on time or just want a mini-sized loaf. With straightforward instructions and common ingredients, you can enjoy freshly baked bread in no time.
Ingredients:
1 tsp activated yeast
2 to 3 tsp sugar
1 ½ cups filtered water (105°F) (355 ml)
1 to 2 tsp vinegar
1 tsp salt
3 cups flour (360 grams)
Instructions:
In a bowl, combine 1 tsp of activated yeast and 2 to 3 tsp of sugar with 1 ½ cups (355 ml) of filtered water (105°F). Add 1 to 2 tsp of vinegar and let it sit for 5 minutes until it becomes frothy.
Stir in 1 tsp of salt and 3 cups of flour (360 grams). Mix until most of the flour is incorporated.
Cover the bowl with a cloth and let the dough rest for 1 hour. Placing it near a window can speed up fermentation.
After an hour, use a spatula to fold in all sides of the dough.
Let the dough proof for an additional 1 hour, totaling 2 hours of proofing time.
Once proofed, gently shape the dough on a cutting board.
Divide the dough into two equal pieces and add your own design.
Place the shaped dough on parchment paper.
Preheat a Dutch oven to 450°F (232°C).
Carefully transfer the parchment paper with the dough into the preheated Dutch oven.
Bake for 35 minutes with the lid on and an extra 3-5 minutes with the lid off. Adjust the time as needed based on your oven.

Finally someone figured out to use a silicone spatula and do all of the kneading in a bowl. I've been doing it for years. I call it 'no touch method.'
Subscribed! ❣
Thank you for the support!
It is a good method, much better than sticky hands both covered in dough.
I used this recipe two days ago and I REALLY LIKED IT! I decided to just make one larger loaf instead of two small ones, but I’ll use it for two some other time. I think the touch of vinegar adds something to it, although I can’t say exactly what. I’ve tried several recipes for artisan bread on TH-cam, and I like yours the best so far for several reasons.
I did have one problem. I followed the instructions precisely, but the dough came out a lot more sloppy and goopy than in the video. Honestly, it was somewhere between a dough and a batter. Why? That meant that I couldn’t really do much in the way of shaping it in the later stages, but I still managed to get it into a Dutch oven, and funnily enough it resulted in a beautiful loaf in the end. Of course I don’t know if the taste was different than it might have been otherwise, but it was good! Now I am about to try it again, and this time I will use a bit less water than what the recipe calls for. I am curious to see what will happen.
I am not a young guy, and when growing up my mother never made bread, so to learn how to make bread, especially at the age I am now, is fascinating and rewarding.
There is nothing better than cutting a fresh loaf with butter, Yumm
love the spatula method!!
I love the way you cut the dough and made two loaves! I love artisan bread in my Dutch oven but I usually cut in half after baking to be easier to slice. I can’t wait to try your way of making two loaves! Thanks!
Thank you!
Soooo impressive! Love your videos @justcooksomething! Glad I found this channel…can’t wait to try all your recipes. Cheers!
Great video ! Very well done ! beautiful bread ! I will certainly try it in the next few days. I'm glad YT suggested your videos !! 👍👍

This was t an English 101 class, it was a baking?
I’m making this today - thank you so much for posting this wonderful recipe and I’m now a follower too
I’ve been making my own bread for a while now and I like this recipe as I see you split in 2 so we’ll see the end result sure hope it looks as great as yours 😋
Samples I’m taking to office so my coworkers whomever wants can sample W/my strawberry jam I made yesterday lol
Thank you! Ohh homemade strawberry jam sounds delicious!
Turned out wonderful exactly as stated in the recipe this is a keeper ❤️👌😋
@@JustCookSomething actually turned out great taking samples for my coworkers along with this wonderful bread
Glad it turned out great and thank you for the positive feedback! 🙂
@@JustCookSomethingyou’re very welcome
👏👏👏👍nice, will follow!;)
Let me know how it turns out!
I have been making this exact recipe but using two cake loafs, I am now waiting for my dutch oven i just purchased and can not wait to try it this way now
Thank you. Keep me posted on how it turns out!
Hydration? 95%? Looks good! I use White Rice Flour on top, slit the load…makes a nice crust..
Good to know! Thank you 🙂
Love this recipe but it'd be very helpful to have storage tips. Rarely does a video include how to store the bread.
Question, I have a 5qt dutch oven, should i cook one at a time or just do 1 big loaf
One at a time 🙂
Just wondered what the vinegar does for the bread as no other recipe calls for it?
Helps the yeast rise!
Quite a few bakers recommend using vinegar, the only difference they use smaller amount of yeast or a SD starter.
Can thry bakef in a Loaf pan instead? What adjustments to the cooking time would be needed?
Sorry I never tried in a loaf pan. I think the timings would be the same though. The only difference is you're not covering the loaf pan with a lid. You might want to grease your love pan as well to prevent sticking. Let me know how it turns out!
I made a different artisan bread recipe and put in two loaf pans. I made a tent with foil over the pan and it turned out great. Make sure you leave plenty of room for the bread to rise under the tent.
what size is your dutch oven?
7qt 🙂
😍🙏🙏🙏❤️🇺🇦
I only have a mini Dutch oven- how should I cut this recipie?
What size is your dutch oven? You can technically split these into four pieces and freeze them. Hope that helps!
@@JustCookSomething I believe it’s 2quarts…
Thank you for the speedy reply when freezing the dough should I freeze it before the first rise or after ?
After!
Just updating to say that cutting it in half like you did once fit perfectly in the mini Dutch oven just have to cook one at a time! They are beautiful!!
That's great to hear 🙂
Vinegar is a common ingredient that is often used in bread dough recipes. It serves several purposes in the bread-making process, such as enhancing the flavor, improving the texture, and increasing the shelf life of the bread. When added to bread dough, vinegar acts as a natural preservative, helping to inhibit the growth of mold and bacteria. Additionally, vinegar can also contribute to the overall rise and structure of the bread, resulting in a lighter and fluffier texture.
Gr, ml? No cups pls
E
Is that "E" for Excellent? 🤣
@@JustCookSomething yes
@JustCookSomething I commented in the middle of the recipe 😂
Bread looks good. Your use of the word "more" before adjectives like smoother is redundant. It's either "more smooth" or "smoother", but never "more smoother". Your English teachers failed you.
Lol thanks for the feedback
Hilarious and here all I was thinking about was baking bread 🤷🏽
Really? You’re criticizing his grammar? Just make the bread!
@@dannythomas5403 agreed
As far as I’m concerned, we’re watching for his baking prowess nothing else.😁Great bread! Seems like the vinegar did something. Thanks for sharing.
You blew it! You can't make a bread making video and tell people to add flour by volume. When making bread you weigh the flour.
Sorry, I guess I'm just used to making bread this way... Did my bread look bad? Are there other techniques you can share? Appreciate the honesty!
I’ve done it both ways and it always comes out fine
Your bread looks delicious! Maybe you can add both measurements in future videos. You have a great channel. I just subscribed.
Thanks for the feedback and kind words. Appreciate the support! 🙂
Lots of bakers are using cups which is volume.. Not sure our ancestors had scales at hand. Anyway there are websites offering conversions. Imagine that.
