Artisan Bread Mini | Dutch Oven | Quick and Delicious Homemade Bread

  • In this video, I'll guide you through the process of making a smaller batch of delicious artisan bread - perfect for when you're short on time or just want a mini-sized loaf. With straightforward instructions and common ingredients, you can enjoy freshly baked bread in no time.
    Ingredients:
    1 tsp activated yeast
    2 to 3 tsp sugar
    1 ½ cups filtered water (105°F) (355 ml)
    1 to 2 tsp vinegar
    1 tsp salt
    3 cups flour (360 grams)
    Instructions:
    In a bowl, combine 1 tsp of activated yeast and 2 to 3 tsp of sugar with 1 ½ cups (355 ml) of filtered water (105°F). Add 1 to 2 tsp of vinegar and let it sit for 5 minutes until it becomes frothy.
    Stir in 1 tsp of salt and 3 cups of flour (360 grams). Mix until most of the flour is incorporated.
    Cover the bowl with a cloth and let the dough rest for 1 hour. Placing it near a window can speed up fermentation.
    After an hour, use a spatula to fold in all sides of the dough.
    Let the dough proof for an additional 1 hour, totaling 2 hours of proofing time.
    Once proofed, gently shape the dough on a cutting board.
    Divide the dough into two equal pieces and add your own design.
    Place the shaped dough on parchment paper.
    Preheat a Dutch oven to 450°F (232°C).
    Carefully transfer the parchment paper with the dough into the preheated Dutch oven.
    Bake for 35 minutes with the lid on and an extra 3-5 minutes with the lid off. Adjust the time as needed based on your oven.

    I used this recipe two days ago and I REALLY LIKED IT! I decided to just make one larger loaf instead of two small ones, but I’ll use it for two some other time. I think the touch of vinegar adds something to it, although I can’t say exactly what. I’ve tried several recipes for artisan bread on TH-cam, and I like yours the best so far for several reasons.
    I did have one problem. I followed the instructions precisely, but the dough came out a lot more sloppy and goopy than in the video. Honestly, it was somewhere between a dough and a batter. Why? That meant that I couldn’t really do much in the way of shaping it in the later stages, but I still managed to get it into a Dutch oven, and funnily enough it resulted in a beautiful loaf in the end. Of course I don’t know if the taste was different than it might have been otherwise, but it was good! Now I am about to try it again, and this time I will use a bit less water than what the recipe calls for. I am curious to see what will happen.
    I am not a young guy, and when growing up my mother never made bread, so to learn how to make bread, especially at the age I am now, is fascinating and rewarding.

    I love the way you cut the dough and made two loaves! I love artisan bread in my Dutch oven but I usually cut in half after baking to be easier to slice. I can’t wait to try your way of making two loaves! Thanks!

      Quite a few bakers recommend using vinegar, the only difference they use smaller amount of yeast or a SD starter.

    Can thry bakef in a Loaf pan instead? What adjustments to the cooking time would be needed?

      Sorry I never tried in a loaf pan. I think the timings would be the same though. The only difference is you're not covering the loaf pan with a lid. You might want to grease your love pan as well to prevent sticking. Let me know how it turns out!

      I made a different artisan bread recipe and put in two loaf pans. I made a tent with foil over the pan and it turned out great. Make sure you leave plenty of room for the bread to rise under the tent.

      What size is your dutch oven? You can technically split these into four pieces and freeze them. Hope that helps!

    Bread looks good. Your use of the word "more" before adjectives like smoother is redundant. It's either "more smooth" or "smoother", but never "more smoother". Your English teachers failed you.

    You blew it! You can't make a bread making video and tell people to add flour by volume. When making bread you weigh the flour.

      Lots of bakers are using cups which is volume.. Not sure our ancestors had scales at hand. Anyway there are websites offering conversions. Imagine that.
