I cooked this with just andouille and chicken the way my mom used to make her jambalaya but your directions and man this was good! I used maybe 2-2 table spoons of sriracha because I like mine pretty hot and this is now a staple! I had never had pastalaya until recently even though growing up we ate jambalaya all the time I have no idea how this variant with pasta eluded me

That looked real good. I like your technique. Do you always use bow tie pasta? I like rotini, I know some folks that like penne, and another who make a fabulous one with orzo.
No sir some times I use Penne and rotini. It’s what we have available at the station! Some people use spaghetti elbow macaroni it’s what ever you like! Big Lew try it out let me know how it comes out!!

I’ve cooked it where you put the noodles in and cook them together. When you add the water it dilutes the gravy and I dident care for the added starch it adds in the grave as well! When you cook it like this Make sure to only cook the noodles about 3/4 of the way so your noodles can absorb the gravy!
