I doubled the portion so my family could enjoy it for four days! I left cake on counter, covered with plastic foil and it remained soft till the last piece. Thanks! I love your recipes!

Although quick breads/cakes will taste better after being let sit overnight, you don't hesitate to cut them up to reveal their inner quality (while you could just cut only the ones that you made the day before and save the newly-baked as "whole" and "intact" for your own next-day's pleasure). I’m going to add a little extra mashed banana next time, and perhaps use a larger egg too as the banana bread could have used a little extra moisture. You could also try adding a couple of extra tbsp of soured cream. It’s a great cake served with butter/ jam though.
Eating this right now and i think I forgot my name for a minute lol! It’s the best banana i ever had soooo good. Because of you i got addicted on baking i feel like I’m a professional baker haha! Your a blessing from above. I just love you, thank God i found your channel. I also share your recipe with my friends and proud to tell them go to Joy of Baking. I just made this yesterday to use up left over bananas and some caramel I had left over from making cookies. It's so, so good! Rich, moist and flavourful... the house is full of its aroma too. Thank you, Stephanie :)

I MADE THIS the other night, ciuoldnt wait for a taste, but did! its really delish but your warning re: the caramels was well taken, as 4 some reason my bread wasn't flat but rose on 1st side predominately, so separating it from the pan was a challenge! even after an overnite soaking, it was challenge keeping the pan all clean, but i think it was worth it, as its really yummy, so thx again 4 your excited state while making this bread!!

you have a terrier, we had a fox terrier bought in Spain and she was bilingual and i loved her so much! when we returned to the USA, we then took her to Taiwan, our next move; after that we had to leave her with my in-laws and their brindel terrier, as we were in apts that didn't allow dogs, very sad day, but my in-laws loved her very much!!
