      How do you account pre-infusion into the timer? Like 10s pre-infusion can't count as 10s of normal extraction, no?

      Thanks a lot for the information. Im one of those who would simply wing it, and go by taste but honestly I find it hard to dial it just right for both espresso and lattes. I will take my scale back out and adjust my grinder!
      Also I was wondering if you had any plans on doing introduction videos on how to roast coffee beans? I have a simple machine at home and theres so many variables (fan, heat' tiome, temperature) its exhausting just trying to figure out what to change from roast to roast....

    I paid $300 for a class about dialing in espresso, and this video explains exactly the same and even goes beyond what I learned in that class. Lance, you are the best.

      Really? Why would you pay that kind of money in the first place? Unless dialing in is more than a hobby I find that a bit over the top. I don't mean to be judgemental I'm just surprised.

      @@gurumze8013 For some people $300 is an hours wage. In that case it can sometimes just be more efficient to pay immediately than look around for hours for the answers your trying to find.

    Pleeeeaaaaaase make this a series, Lance! It's SO helpful to see the logic and train of thought as you go through it for this particular situation. Having you go through this with different coffees will be a blessing to learn the nuances in techniques! And you could even expand it to include pourovers. Could be very entertaining watching from quality roasts all the way up to that royalty-tier they use in competitions. I'd watch that forever

    Another important thing: when dialing in a lot of shots, don’t be afraid to spit them out. You can accidentally have way to much caffeine really fast if you don’t.

    New home baristas are so lucky to have resources like this to learn from. 10 years ago alot of the myths Lance busts in this video were prevalent on the forums and TH-cam. Coffee knowledge has come so far since then and Lance is great at its communication.

    This was fantastic. I love how you just did the bare minimums, what most of us started when we first got into espresso. No WDT, no sifting, just tapping, tamp, measure and go. This would make a great series!! Dialing in random coffees

    This is a great video for people who are hung up on the 1:2 in 25-30s. I learned that guide and thought it was a rule for the longest time, but experimenting around that has brought me much better espresso. Nice video man!

    Appreciate you including the bit about using different ratios for different roasts! I had a light roast that I really wasn't enjoying, and a 1:2.5 extraction was a complete game changer!

    I predominantly use a Brazilian dark blend for my morning espresso.
    The ratio’s you gave for medium and light roasts are very helpful and I’ll be sure to give them a try. Cheers man.

    Excellent and entertaining. I've always timed my shots from when the coffee hits the cup. As a result over extracting, also been doing a 1:2 ratio for medium roasts, so maybe under extracting there. Will now recalibrate with this new info! 🙏🙏🙏

    Another fantastic video! I’m sure you did wonders for what you had to work with on that GCP with no PID. Even better than ratio would be to get that temperature at 180° +|-5° to get rid of those unfavorable notes.

    This video is just what I needed! I always buy different origin light roasted coffee, so every single one requires for me to adjust my J-Max grind size to hit that 35-40 second mark for the Flair Pro 2. I'll get to the precise grind size faster with this analysis and pull great shots with less trial and error (I always taste the shots so I wasn't too far off lol). Great video, Lance, as always 😎

    Perfect timing for me! I'm about to head to my parents for a few days for Christmas, and I plan to try and break them out of using a supermarket italian roast in a pressurised filter. Their machine and grinder can 100% get good espresso, but they haven't found a coffee that both suits their taste and they can get fresh enough to work for them. I've found some double roasted coffee to try, so this is perfect for me. It's well explained and easily understandable, and the small tips that aren't the most obvious help a lot.

    Note that one some machines, like my Breville Bambino, the amount of time from when the button is pressed and the extraction begins can vary by a few seconds because the machine is more or less warmed up. Don't forget to do the group head purge, and running a little hot water out the steam wand just before hitting the button ensures consistency!
