Made this tonight for my wife. we have travelled extensively in Vietnam and are completely in love wit hthe food. This is far and away the best version of Pho Ga that we can realistically make on a regular basis. So very very well done - we love it. Thank you.
I just made this and it was absolutely delicious. I love Pho but it can be expensive if you want it weekly. It took me about two hours to cook this because I kept watching the video. I didn't want to mess it up. I got all of my ingredients from a Vietnamese grocery store. They were very helpful helping me gather all the ingredients. I'm quite sure you can get everything at your local grocery store but it might be a little pricey. The only thing I won't get from there the next time is the chicken. I asked for a whole chicken and when I got home and got ready to prep the chicken and I took it out of the bag, I screamed and threw the bag because the head and the long legs were still on it!! So I took a deep breath and closed my eyes and cut the head off and the legs. And for some reason, I couldn't bring myself to put it down the garbage disposal so I put it in a bag and threw it in the freezer and I'm going to throw it in the trash on trash day...Lol! +Angela Little Hey City Girl! I got the giggles reading your comment. Yes, the whole chicken is the entire chicken when purchased from the Asian grocery store. You can ask the butchers there to trim the head and legs for you...but KUDOS for prepping it yourself! It won't be so scary the next time! 😃 I am glad you enjoyed the pho ga. I got an instapot this passed xmas and finally had to energy to cook again so I used this video as a guideline to making Pho Ga. My husband who is a small town white boy LOVED this version over the traditional way of making it. It turned out more flavorful and soo quick and easy!! Thank you for these videos. Again, you make my transition from Socal to a small midwest/east town so much easier to handle. Food is love in my family growing up and I am so happy I am able to share this experience with my growing family.

The broth turned out delicious and the chicken was literally fall off the bone tender. My only wish was that the instapot was larger so I could make a bigger pot of pho!
I love eating Pho Ga and Pho Bo, but have never tried making either because the recipes always seemed very complex and time consuming. But I do have an Instant Pot and your recipe looks manageable, so I'm going to give it a try as soon as I can assemble all of the ingredients. I will post another comment about the cooking experience and the quality of my soup, compared with that of the great little Vietnamese restaurant I usually go to for Pho. Thank you, Tran. Of course, I love using a pressure cooker and have lots of recipes to share. I like the Instant Pot a lot. The traditional stove top ones work great too and are inexpensive. I've heard great things about the "Breville Fast Slow Pro Pressure Cooker" and if I had to buy another pressure cooker, it would be this one. My only hesitation is it's only 6 quarts. Good Luck and let me know which one you decide on.

Hi em, the rule for pressure cooking a whole chicken is 6 mins per pound but you can reduce the time since it's cooking in hot liquid. Cook for 20-23 minutes if you're concerned the chicken will fall apart. Good Luck em!
You might want to boil the chicken for about 5 min to rinse chicken. Chicken is considered dirty when you take it out of the cooker.also cutting it up beforehand is also good to rinse the blood etc
Hi em, the cutting board was customized to fit my sink and was provided by my sink manufacturer. You may want to check the maker of your sink and see if they make cutting boards to fit your sink. You can also find over-the-sink cutting boards on Amazon. Hope that helps.

+Vy Van Thank you! I had a pho facial after removing the lid...lol! Cardamom is different from nutmeg. You can find the spice in most grocery stores in the spices section. If you have an Indian grocery store near you, you'll definitely find this spice there. Thanks for the recipe, chi. I have the exact same instant pot but too busy to play with it. I just wonder does the pressure cooking make the broth cloudy? I usually use the thermal cooker to make broth (it takes about 7hrs, but the broth is clear, and it doesn't use electricity at all). And I'm just curious if you have used this instant pot to cook rice or other things beside broth?
+May Lily Hi! That's awesome that you have this same pressure cooker! I've tried most of the functions and have made soups, stews, yogurt, porridge, rice and sweet rice with success. I don't think the pressure cooker makes the broth cloudy. A lot of the cloudiness can be minimized in the prepping of the chicken as I showed in the video. The thermal cooker is great for pho but it does take a long time. I hope you'll give this recipe a try and let me know what you think. Thanks for stopping by :)

Pho Ga is more easy than Pho Bo. I can do this. I love Pho. I can eat Pho every morning. How come every time you cook the meat and you cool it with ice. Will the taste the same? I would let it warm instead. Thanks for showing the video!
Hi Ntan, lol...this is definitely easier than Pho Bo. Dunking hot meat in an ice bath stops the cooking process and firms up the meat so the texture is not mushy. Try it with and without the ice bath and see if you notice the difference. Enjoy!
What if I don't have a pressure cooker can I use roasted chicken at Costco instead? And how much salt should I reduce if I used roasted chicken? Thanks so much for the delicious Vietnamese Chicken Noodle Soup recipe!
A store-bought chicken is a good shortcut. There is no additional salt in this recipe. I would recommend cooking the chicken stock most of the way with the aromatics and then adding the roasted chicken to warm it up. Since it's fully cooked, it doesn't need to be boiled. Enjoy!
Time Saving TIP: For any liquid you use in the instant pot, bring it to a boil on the stove top first, then add it to your Instant pot, this way you do not have to wait all that time for your pot to come to pressure (because it does not have to heat up the liquid, which creates the pressure) This will save you that 20-30 mins on your recipe!!
Thanks and you're absolutely right! I typically don't but my camera was right above the release valve. I recently bought a diverter which directs the pressure out the sides. It's pretty neat and I'll share it in another video.

Time Saving TIP: For any liquid you use in the instant pot, bring it to a boil on the stove top first, then add it to your Instant pot, this way you do not have to wait all that time for your pot to come to pressure (because it does not have to heat up the liquid, which creates the pressure) This will save you that 20-30 mins on your recipe!!

Thanks and you're absolutely right! I typically don't but my camera was right above the release valve. I recently bought a diverter which directs the pressure out the sides. It's pretty neat and I'll share it in another video.

I never see this broth was seasoned appropriately. No salt added to the broth nothing. Adding fish sauce when ready to eat will make it smelly. Yuke
