    Van, I really REALLY love your recipes. You don't take shortcuts and you show in great detail how to make something from scratch. This is by far the BEST pho ga recipe I have seen. I really appreciate you showing us how something is traditionally made. I love the use of daikon (although I think the verdict on MSG is not necessarily correct as billions of Asians have used it for many many years and if I recall, it is a naturally occurring substance in mushrooms and such...don't quote me on that as I've not read up on it recently and am going off of recall memory. I'm sure there are those whom are allergic to it, but many people are allergic to peanuts, grass, etc., but those things not villainized like MSG. MSG is used in various snacks and such and I believe is hidden under the label "natural flavoring". Coconut oil and eggs were villainized once, and now they are considered good for us again. Regardless, I do like that you gave people an option of using daikon). Anyway, I just wanted to thank you for taking the time to show us how pho ga is cooked properly and I love your little boy's reaction to eating it. As always, he is adorable!!

    I make this exact recipe once a week, so I thought I should give you thanks. Out of all the Pho Ga recipes I’ve found, this is it. All of the tips makes a difference. First, the daikon makes a difference. Not putting in the fish sauce, and adding lime leaves is perfect. Boiling the noodles separately is a must. Everything you put in this video is on point and amazing. Thank you so much. It’s our family favorite.

    Van I think you are the best on TH-cam for vietnamese recipes. A lot of recipes adds fish sauce which is not really correct. Fish sauce will make the broth sour...

    Van, you provide us with excellent recipes. I appreciate that you use all natural ingredients. My local pho restaurant doesn't use the makroot leaves but I just put a fresh batch of leaves in the freezer earlier today so I will have to make this pho for my wife and mother. It's been fun to watch your boy grow in your videos!

      +smrttgrl I've heard that at some restaurant, they make only one type of broth and use the same broth for beef pho, chicken pho and shrimp pho :) I would use the pho ga broth and add shrimp. The beef broth is too strong for sea food :)

    I followed all your instructions and my broth turned out very much mild,
    not that flavourful like the ones from the restaurants.
    I wonder why..

    • @VansKitchen
      @VansKitchen  9 ปีที่แล้ว +2

      You might add too much water. My stockpot is 12-quart pot but as you see in the clip, 2/3 of it is cover with chicken bones, daikon, onions,... and the free-range chicken was barely fit in the pot. Also, I'm pretty sure the pho at the restaurant always added MSG, my recipe doesn't call for MSG. You probably didn't get used to the taste without MSG?

    • @WorldOfHumanWreckage
      @WorldOfHumanWreckage 9 ปีที่แล้ว

      Adding fish sauce and more rock sugar always helps with flavor. I like to start with1 quart less that I should, because you can always add water to dilute flavor. Taste testing is important too.. If it's too diluted, you can simmer for a few more hours to reduce a quart or 2.

    Van, thank you for sharing this with us. My only question is.... I was always told never to use cinnamon sticks with pho ga, that cinnamon was a flavor for beef pho. Is this true or is adding cinnamon to your soup something you prefer?

    • @VansKitchen
      @VansKitchen  9 ปีที่แล้ว +1

      +Choras Den This is how I was taught to make chicken pho from the beginning. Both beef pho and chicken pho use pretty much the same types of pho spices, but the amount to put in chicken pho is less than beef pho, since the beef smell is stronger. Also, chicken pho uses lime leaves while beef pho uses dried clementine skins. I may feel lacking of flavor due to getting used to the flavor I have been eating... haha.... So, it's up to you! And that's is the good thing of home cooking, you can adjust to your own favorite! ...hehe.....
