    A tip for using all those beet greens: discard the dead or damaged leaves, cut the good ones into thirds or quarters, (depending on what size you want) and boil them all. Then strain them and let them sit to dry out. And you can freeze what you're not going to immediately use in bags that are big enough for one dinner. And when you want to use it, fry it in some oil, and add salt, and enjoy.

    The kitty steals the show again ;) Coming from part of the world where we have no lizards (well, I think 3 native ones that are very rare) seeing her capturing one was hilarious. I did also laugh at your machete attempts, looked pretty good in the end,trying new toys is part of the fun! Glad to see you're managing to get some good over wintered harvest from the beetroot etc. Pickled just in vinegar with a few peppercorns is the absolute best way to eat it.
    Ps. I've been thinking this for ages but Jacques has been a wonderful addition to your channel, having someone to play your humour off against is a really good addition, you seem more confident and like you're genuinely having great fun filming.

    Maybe hit a little lower...I used to use a scythe. The circular shape catches a bundle.

    Pro tip. Add some beet greens to your beet borscht! The greens also go good in a nice “zumma borscht” (aka summer borscht that doesn’t have beetroot in it). I also love beets roasted with salt, dill, and feta. I like cooked feta though and it sounds like that might not be the vibe Kevin wants 😅

      I adore beet greens. I make a warm salad of the wilted greens and soft chivy goat cheese. Love to pluck them as cut and come again until the root is bigger.

    I got so freaked out after I ate a bunch of red beets then went to the bathroom afterwards! I thought i had internal bleeding but then remembered I ate a bunch of beets.

    Lazy dog farms, mows his down and then works it in. You can also plant that, let it get up a little and put chickens on it, then you can work it in.

    I do a 1/4 inch cubed carrot and beets chilled then pour warm coconut oil over the chilled beets,carrots. Salt to taste before. I use big natural salt

    I used the beets I grew this past season in some smoothies. They turned out surprisingly sweet and delicious. I'd say beets eaten raw can be quite versatile. Mark from Self-Sufficient Me lists some good uses for beets in his beet video. Also ngl, the way you guys used those machetes did look pretty fun.

    Also I pickle most of my Beets they last a long time in the refrigerator and they're wonderful pickled be sure and add some sugar to the pickling brine

    Machetes work well for root division, cutting off bottom tangled plant roots that were in containers.

    We live in the tropical jungle, so machetes are with us all the time and our cat catches lizards, iguanas, mice, rats... you name it.

    I freeze those beet greens and put them in my smoothies, the beets themselves are good in smoothies too. I get it that you had a lot to process but they are so good!

    If you want to try another awesome beet salad try cooked, cubed and add to cooked cubed potatoes, capers, cut up cornichons, parsley, green olives, black olives, salt, pepper, in a Dijon vinaigrette.

    Lol when you patted your butt. Careful with those machetes. My husband's grandmother, when she was younger, almost lost a leg when her machete bounced back from her swing and hit her hard in the shin. She has a huge scar.

    Informative and funny video. There are sharp rake type implements that you swing that can chop without tiring the arm with that tennis swing.. I never ate a dicon radish. But I love roasted beets and steamed beet green grown without pesticides. I wrap the beet in foil and put it in the oven or on the grill to steam roast. Nothing like those nasty jars from the store. And after roasting and slicing, they can be frozen in bags for later consumption hot or cold without loss of flavor. I learned that 2 years ago when I had an over abundance. Beet tops can be blanched like spinach and frozen too.
    Love the Cat's lizard and how it escaped. Lots of fun distractions. Happy gardening

    My vote is to put in a giant pumpkin. I can hook you up with 2,000lb pumpkin seeds/genetics. Super fun they put on 40lbs a day when they are hitting their stride!

      Way, that's not even uncommon. And 2,000lb genetics nowadays are not that hard to come by. A lot of people want their seeds grown, so they will throw their heavy genetics around the country like candies!

    OMG! Good thing kitty wasn't hiding in the cover crops when you were chopping it down! Could you use a hedge trimmer to cut the crops down? You guys are too funny, LOL! The Epic Chicks look very healthy and happy - way to go "Dad!" WIth your irrigation set up, doesn't the mister cause problems with the wet leaves? Say, when did the mural go in? How did I miss that video?

    I would love to see an area dedicated to making lechon but since this is about gardening, growing pumpkins or watermelon where you "manually plowed" would be a good addition to the garden.

    Mmm bake the beets in the oven in a foil pack, with chévre cheese (feta cheese, or brie can work sometimes too), pumpkin seeds and a drizzle of honey and a little balsamico vinegar. Man, it is sooo goooood. 💚

    To your beet salad - try with walnuts (or nut of choice) to add texture and protein 😊 and maybe goats cheese (chèvre)

    It's fun but there's such an easier way to kill a cover crop. You just use a pallet, a big plank of wood, or anything flat and heavy you can step on. You squash your cover crop, by really stepping on it so you hurt the stems, crunches them. And you advance step by step into your cover crop field. In the end, you'll have a nice mulch. At this stage, I usually add a bit of wood chips, and if it's a hungry crop, some spent barley or compost as well. The cover crop will die, coz once it flowers, it cannot get itself upright. That's one of the reasons it's so important to let it flower (the other one is to get more biomass, carbon in the soil, and mulch out of it).
    If you want the best cover crop ever, the key is different plant groups. IE if you plant one type of crop, it'll be a lot less biomass than 4 different types. And same thing, don't go with one grass and 3 legumes, you're better off with one legume, one grass, one asteracae, one brassica. Recently it's been proven (see Christine Jones webtalks) that it really increases your biomass coz plants exchange nutrients through micorrhizae or bacteria. Some will be better at getting phosphorus and sulphur (like the brassicas), others at getting nitrogen (like the grass and legumes). The key is that you don't necessarily need the legume in there : all plants are able to get nitrogen from nitrogen fixing bacteria (a discovery that's pretty recent) as long as you don't fertilize them (adding ammonium or nitrates will stop plants from being able to get nitrogen from the rhizosphere). It's just that legumes have nodules on their roots while other plants have the rhizosphere form those nodules.

    Chickens will love the garden greens, just don’t give them any nightshade greens because of Solanine toxicity.
    I help offset my feed bill in the summer with weeds and yard trimmings. They need to be given grit, or access to free roam and find grit in the yard, but it works well to keep them happy.
