  • Chilli chicken recipe: Chilli chicken is perhaps the most popular Indo-Chinese dish found both in restaurants and street side stalls. No visit to Calcutta's Chinatowns (especially Tangra) is complete without an order of chilli chicken. The dry chilli chicken works as a snack, appetiser as well as a side. The gravy chilli chicken is more popular as a side to either chowmein or with fried rice. There are various versions of the chilli chicken recipes. While you can play around with the sauces you like in your chilli chicken, most folks will agree that the best chilli chicken has the chicken still crispy when served. With that goal in mind we tested both the wet batter as well as the dry breading technique and finally went with breading. What yielded the crunchiest chicken was Kenji Lopez-Alt's method (www.seriouseats.com/2014/04/t..., which he had used in his General Tso's Chicken recipe in Serious Eats Food Lab.     Love that you can hear the minutest sounds...the sloshing of liquids, knife hitting the board, breaking a dried red chilly into half, the sizzle, it's almost like I can guess what's happening even if I am not watching the video... And they take the video to a very therapeutic level. I watch your videos for their quality. Please keep it up!

    Probably the only genuine chilli chicken recipe on TH-cam. Bong eats you are a really, really reliable channel. For this dish, I have one suggestion though. Add finely chopped onions too, as they determine the texture of the sauce. Every body borderline licks the plate for those onions..

    Attention to detail is what makes you special around all. Chilly chicken is a common recipe but you guys still shown some of the most important aspect of making it smartly. Frying chicken at the last to keep it crispy, Adding chilly oils and so many other things. Great to learn. Keep Posting.

I followed your recipes and it turned out to be the be the juiciest and crunchiest chilli I had ever made, even though I did not have Chinese wine ( used vinegar as a substitute).     I cooked this today and it turned out amazingly delicious. I couldn't believe how well it turned out. I don't deserve any credit though. You deserve all the credit because you created a simple to follow video that teaches anybody to cook. While the mass measurements do add an additional 15 minutes of prep, I'm glad to spend the extra time.

The technique was a bit painstaking, what whith the crumbing before frying and all, but the end result was my family declaring that this was the best chilli chicken they have ever had.     I just love that you put that MSG disclaimer every time you use it. Never it was actually proven that it was harmful they just speculated that it was harmful. The Chinese Restaurant syndrome and all that. It’s actually simple to pass a lie as a truth, just repeat it many times but to say the truth many times just to let it be true,its really hard. Its really sad that everything at one point of time comes down to this.
    Bong eats you both are amazing. If only I knew much more about cooking I would’ve more thoroughly appreciated your efforts because I just cannot really stop at adoring the aesthetics of the cooking. Just cant keep on clinging to that abstract and not so concrete intuition and call the dishes beautiful or amazing or delicious. If I cannot be boringly vocal about it every time everywhere I could at least be silently running a commentary in my mind.

      It was found to be harmful but at very high concentrations. At such strengths even table salt is harmful. Also one would have had to consume those ridiculous concentration for many days for it to have caused the brain damage. That is what laypeople didn't understand about the study and how the anti-MSGers went on

    everytime i get amazed by your videos.. I can see these anytime of the day . yes, these are made with that much of love.. These food cooking art also describes that you guys are awesome as persons too.. n one thing i like too much that for the spices u do not rely on store bought things!! those masalas grinded in that "hamandista" enhances the flavour .. superb!!

    Can you pls tell me where will I get these japanese products that u have used in this video... I live in kolkata and it is really hard to get these authentic products that u people have used in this video

      Hi Neha, we haven't used anything that you wouldn't find in Kolkata. Both Kikkoman and Lee Kum Kee brands are readily available in New Market. We would also highly recommend using Pou Chong which is Kolkata's local brand of Chinese sauces (we will add all these locations in a comment and pin it).

      Maulin Agrawal no you won't get all these brands at spencers bcz I have already searched it. But you can order it from amazon if you want these products from the same brand

      sugar is not added for sweetness always. Sometimes sugar is added to control the strong flavours of sauce or masala.

      I think I saw 20 gm sugar,to me its too much, 1/3 teaspoon is enough.
