Monica is a pioneer no doubt, but over time her food has got more and more Indian-ised - Ah Leung is where you still get the old style tangra food...having said that Calcutta is still the home of Chin-dian food..

She herself mentions in the video that Indian palate loves more deep fried texture in food, which is different from original Chinese, which is more sauted and boiled.

The warmth and humility with which Ms. Monica served and had a conversation with Kunal was heart warming. While India gets its money from Delhi, Mumbai, and Bangalore... Kolkata is where it gets its soul. The contribution of Kolkata to the shape of Indian cuisine is far too often undermined. One of the best episodes in years.

Aah! Indian Chinese food. I was hooked on it in 1980s and 1990s. Since 1998 I am living abroad, first USA and now London UK. In London there are many restaurants professing Indo-chinese cuisine but nowhere can I find the star dishes from my youth such as ginger chicken, garlic chicken etc.
On my visits to India, I realise that even there, Indo-Chinese restaurants have gone upmarket with exotic dishes and it is difficult to find anyone using earthy recipes of yore. I have taken to cooking these at home now. But it is difficult to cook up a meal with American chopsuey, ginger chicken and sweet corn soup all in one go!

We used to have a lone Indo Chinese aka Tangra restaurant in Bangalore. It was called The Chinese Restaurant on upmarket Brigade Road. That was during the 1950s. Then after the 1961 conflict with China the name was changed to Continental Restaurant. Thats where most Bangaloreans tasted our Chinese cuisine. The popular dishes were Sweet Corn Chicken Soup, Chjnese fried prawns ( somewhat like prawn tempura ) with chilli sauce, Chinese fried chicken, ( dry with a touch of soy ) Chicken fried rice and Haka noodles. I'll give and an arm and a leg for these dishes which the late Mr. James Leong dished out. He was a frugal man riding a Lambretta scooter when he could have easily afgord a car and a chauffeur. Nostalgic memories.

American Chinese fast fpd is also deep fried sometimes. Kung Pao chicken is not deep-fried but sauteed. However, orange chicken and General Tso's chicken are deep fried.

I miss Calcutta Chinese food. There are some restaurants in the Toronto area that serve Hakka - but nah! And by the way, in Beijing you do get Calcutta type Chilli chicken. I was so thrilled to have it there !!

Time for real Chinese food as palettes and travel has made the difference more clear in this day and age. As travel to china is now accessible it comes as a shock that the spicy concoction we loved before is very different from chengdu sichuan cuisine and hakka from Taiwan is different too. Uniformity will help Indians make a quick transition when travelling elsewhere
