Looks delish. When pre-heating the oven, I put the casserole dish in with the olive oil so it gets hot. When the oven is pre-heated, I take out the casserole dish, add the mixture and it sizzles on the bottom so that part is crispy as well. Then proceed with the recipe.

Hi Luli, I loved the idea of your artichoke heart casserole so much that I went to Trader Joe’s to buy them. Frozen artichoke hearts have been discontinued, they only carry the jarred ones. I also checked at a premium grocery store for the frozen hearts. They can’t get them either. Thought your viewers might want to know this before heading out to shop. I’m going to continue the search because that sounds like the best way to make this side dish.
@CyndiConnard Depends on their zone. From seed it can take 3 years for mature plants. The ones that are at nurseries in pots should be at least a year to 2 years.
watching this reminded me to order flat leaf parsley seeds for winter. Pacific NW is warm enough most of the time it lasts all winter. Pick less during slow growing times. My favorite winter herb. It will bolt in spring and let it for the seeds to replant.

Yup, I just drain them and give them a squeeze in paper towel just to dry them a bit.
Can’t wait to make this! I would toss the artichoke in oil in a small bowl, and combine all other ingredients then add the artichoke

Does it make a difference if you remove the parsley stems
It doesn’t matter. I prefer to eat only the parsley leaves and using stems for broth making

Hunt down canned artichoke bottoms, think Reese or Reed is the brand. No leaves. Makes a great dip/casserole etc.
Stop scraping with the sharp blade, use the back. And one more bag of artichoke hearts, and garnish with more parsley or chives.
