I've made these twice, and once I put it into a breadmold to make sliced bread. This is the BEST gluten free bread I've ever tried. It's better than Schlar or any other frozen/non frozen bread. I've tried over 10 brands over that last 5 years. I've tried making bread maybe 10 different times as well (different recipes). They are always dry and crumbly. This is soft even after being in the fridge. One tip I want to add to those who read this is to use Walmart GF flour. No need for Xanthan Gum with it.
I made this but substituted coconut milk and coconut oil with great success, so no dairy. I didn't have xanthan gum, so 2 tsp of xanthan gum became 2 tsp of psyllium husk and 2 tsp of gelatin (for total of 4 tsp replacement) and since the mixture was too runny despite using a stand mixer, I used crumpet rings to hold the batter into place. Came out great!! Yes guys, you can make it dairy free.

Thank you for sharing this recipe! Since my fiancé has gluten intolerance, I had to make an alternative bun to him to fully enjoy his burger. Even though there are (i wouldn’t say a lot, but not as little as you would imagine) options in hungarian shops to buy different gluten free buns (schar, spar free from, different bio shop versions etc), they aren’t so good. My fiancé even said that if I don’t want to make gluten free bun, don’t buy buns from the shop, he’d rather eat his burger in a gluten free bread. This was my first gluten free bun recipe I tried, it was easy to make, it was delicious, it didn’t dry out the next day, and even I chose this bun to my burger instead of not gluten free shop bun. Me myself not being allergic to gluten said that it was truly something else. My problem with gluten free stuff made by brands, that they usually taste like weird flour: it’s like chewing gluten free flour, and has a weird aftertaste. But with this recipe it was like buns from normal flour, I was shocked. My fiancé said that he had never eaten a burger this delicious. I didn’t know we had xantan at home, so I was going to replace it with psyllium husk, but then I found xantan. I don’t know how would it turn out with psyllium husk, I might try it later, but I would say you should get xantan, usually you can find it at bio shops, and I think it matters. For the flour I used Nutri free bread mix, it was great to work with! I used a robot machine instead of the wooden spoon, it was way easier to me. I definitely recommend to try it, it was light, delicious, and an amazing bun to our handmade burger!😊 Thank you again!

Mine did not rise or grow much although I used newly bought yeast. They turned out like scones--biscuity on the outside, light fluffy on the inside. It did not look like a sponge on the inside as shown here, but does taste good.
I haven’t personally tried this - brioche is quite dependant on the egg, milk and butter to enrich it, would have to do some experimenting to see if I could find a substitute which had the same effect!
Currently making them with chia “eggs” (1tbsp chia + 2,5tbsp water= 1 egg) because we ran out eggs, so I’ll update how they turn out! Looking good so far, so fingers crossed!
Sorry no, it has to be an all purpose blend like the ones detailed in the written recipe (see link in the description) - unfortunately almond and coconut flour are a whole different ball game and you can't just straight swap them for 'normal' GF flour

So here's a bread flour recipe:
6:1:1 ratio of white rice flour, tapioca starch, and potato starch flours. Add 1 tsp of xanthan gum per cup of flour.

Sorry to hear this, it sounds like the yeast wasn't quite right - did it froth up when you activated it at first?
