Imo it's easier to cook cut up bits, otherwise crispy bacon flys off the cutting board, & cooked bacon can be hot if in a hurry to crumble it. It's a personal preference, I've done it both ways.
The rolls should be left on the counter. Putting bread in the refrigerator causes it to go stale. If you're afraid it will go moldy before use, better to freeze it.
My daughter makes these and they are good....great to used left over turkey from the holidays too

I always cut my bacon bits before cooking, it just makes it easier to deal with once it is cooked.

Recipe clearly says to add the remaining bacon on top of the second layer of cheese.
