Hi Jan n Ann, There's a trick to savouring Xiaolong baos.. Use a chopstick poke a hole into a dumpling. Let the broth within flow into your spoon. Enjoy the broth. Dip your dumpling n eat as U will! Be careful, xlb dumplings can have boiling hot broth goodness!

Welcome back to SG! Next time when you guys eat xiao long bao or other dumplings with soup inside, do use a spoon to help you to pick up. Be careful not to poke into the dumpling and let the precious broth leak out before you eat it🤭That sauce for the xiao long bao is actually black vinegar and ginger not soy sauce. Don't place your utensils on the tray as it's not hygienic. Hong Kong has goose. However Singapore can't get goose (banned). I guess you guys miss the opening hours for the Chendol stall and the popular 1950s coffee stall :D
Xiao long bao, you need to dip the ginger soy sauce and place it on the spoon. Bite a tiny hole on top of the XLB and suck the broth out before eating the whole XLB.
Anna and Jan I'm enjoying this series of you both in Singapore. Singapore has some great restaurants in all of Asia. I would love to see you both do a Japan series. Much respect here from America.

More upmarket go to tg Pagar or ann siang or off bugis streets. East coast or Joo chiat has good vibes too

It should be ginger with vinegar, not soya sauce. 😅 usually there will be spoons available along with chopsticks, so the point is to use chopsticks to pick up food into the spoon & eat, which is easier & food don't drop if you are not too good with chopsticks. When it comes to rice in SG, you can actually tell the hawker to reduce the rice portion if you do not eat that much to prevent wastage.
