In the manual for the 3 stage system, it says to remove the white tube from the tank and add the Bleach to that end. However, i dont think that matters since the clean water being produced will carry the bleach to the tank.
I disconnected the plastic tubing from the filter assembly, put bleach in the tubing, and plugged it back. Now water is leaking from the connection. What should I do?
I see this is a year old, so hopefully you've found a solution. For others (or you if you've somehow juggled a leak for a year!) I'll just mentioned what worked for me. I had a lot of issues with leaky connections and here were a few strategies: 1. obviously, from the instructions, cut the tubing fresh, square, and free of dents and scrapes; 2. where possible I went to the hardware store and bought double o-ring connectors to replace existing connectors (but not possible in the manifold body); 3. I avoided tight bends in the line (avoiding pressure on the connectors) - I even bought 90degree angle connectors - better to have another connection than pulling the tubing away from the connector; 4. as a precaution I bought a cabinet liner to catch any leaks. This is a fair product, but not great connectors, and slow leaks can be a disaster for your kitchen!

How often should this be done?

How do you take out the tank tube?
You have to push in the plastic circle around the hose and pull hose out.
