I've been vegetarian for nearly 40 years and no one and nothing can convince me to start eating meat... and I'm still not as enthusiastic about veggies as you are. I've been making falafels (yours are still inspiring and definitely more appealing than mine) and humus at home for over 2 decades, and I can still learn something new from you.

where I live, tahini is not always available, so I've used whatever nut butter I have on hand. gorgeous

Peanut butter humus 🤣 now that's an idea
Your method is new and looks delicious.. but the method of making falafel is different. There are countries that use only chickpeas and countries that use beans.. We combine fava beans and chickpeas, onions, garlic, spices, parsley, coriander, which gives it a green color. Before frying, we add a small spoonful of soda carbonate. As for hummus, it only needs garlic, lemon, cumin salt, olive oil, and the way to decorate is like ours. I always like what you make 🙏🏻🌷🌯

Trust me, adding green peas doesn't help with the flavor it just helps to enrich its color.
I highly recommend adding Taratouur / طرطور which is A tahini with lemon and yogurt to the falafel sandwich.
Try adding packing soda to the dough of falafel will make it more crispy.
Just add some donna kabab meat and it' would be mint.
Hopefully I have those one hundred ingredients in the back of my cupboard.
If you don't have them you can buy them, Jamie can't do that for you! Or buy something canned... ;)

Looks like a nice meal but don’t use peanut butter. Tahini is easier to source than preserved lemons.
When my family saw this recipe they were horrified
A real falafel recipe would look like that: 200g of Chick peas, one onion, one Serrano pepper, five garlic cloves, about half coriander bundle, about half parsley bundle, about one teaspoon of cumin, about one spoon of sweet paprika, about one teaspoon of salt, about half a teaspoon of black pepper and about half a teaspoon of baking soda and water and oil as needed
