  • Welcome to our channel! Today, we’re cooking up a classic and comforting Indian dish: Aloo Gobhi. This hearty vegetarian curry features tender potatoes and cauliflower simmered in a rich blend of spices. It’s a perfect side dish or main course and pairs wonderfully with rice or Indian bread.
    *Ingredients:*
    - 2 cups cauliflower florets
    - 2 medium potatoes, peeled and cubed
    - 1 onion, finely chopped
    - 2 tomatoes, chopped
    - 2 green chilies, slit (optional)
    - 1 tablespoon ginger-garlic paste
    - 1 teaspoon cumin seeds
    - 1 teaspoon turmeric powder
    - 1 teaspoon coriander powder
    - 1 teaspoon cumin powder
    - 1 teaspoon garam masala
    - 1/2 teaspoon red chili powder (adjust to taste)
    - 2 tablespoons oil
    - Salt to taste
    - Fresh coriander leaves for garnish
    *Instructions:*
    1. *Heat Oil:* In a large pan, heat oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
    2. *Sauté Onions:* Add finely chopped onions and sauté until they turn golden brown.
    3. *Add Ginger-Garlic Paste:* Stir in the ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
    4. *Tomatoes & Spices:* Add chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the masala.
    5. *Add Vegetables:* Toss in the cauliflower florets and potato cubes. Mix well to coat the vegetables with the spices.
    6. *Simmer:* Cover and cook on low heat for about 15-20 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
    7. *Finish with Garam Masala:* Once the vegetables are cooked, sprinkle garam masala and give it a final stir.
    8. *Garnish:* Garnish with fresh coriander leaves and serve hot with rice or roti.
    *Tips:*
    - For added flavor, you can add a squeeze of lemon juice or a handful of peas.
