Bakewell Blondies
Recipe
250g butter
180g white chocolate
125g caster sugar
125g brown sugar
3 eggs
100g ground almonds
200g plain flour
1 tablespoon cornflour
200g white chocolate chips
150g raspberry jam
30g flaked almonds
1. Preheat oven 160°C.Line a 20cm square tin.
2. In a large saucepan over a low heat melt together the butter and white chocolate till melted. Mix in the sugars and set aside to cool.
3. Once cooled mix in the eggs, then the flour, ground almonds and cornflour. Add the white chocolate chips and mix through.
4. Pour the mixture into the lined tin. Dollop the jam on top, lightly swirl through the blondie mixture. Sprinkle the flaked almonds on top.
5. Bake for 45-55 minutes. Leave to cool in tin, then cut into squares.
