How to make my Bakewell Blondies | Jane’s Patisserie

  • Bakewell blondies anyone?! 😍🥰
    Thick and gooey bakewell blondies with ground almonds, raspberry jam, and flaked almonds on top! Heaven in every bakewell bite. 😍
    Recipe
    ■ 250 g unsalted butter (melted)
    ■ 125 g white granulated sugar
    ■ 125 g light brown sugar
    ■ 3 medium eggs
    ■ 1 tsp almond extract (optional)
    ■ 100 g ground almonds
    ■ 200 g plain flour
    ■ 1 tbsp cornflour
    ■ 200 g white chocolate chips
    ■ 250 g raspberry jam (or any other flavour!)
    ■ 50 g flaked almonds

    I LOVE your recipes. Your brownie recipes are my general go-to ones when I need to make some.
    I'm making these blondies - starting right now - and can't wait to see how they turn out tomorrow, when they come out of the fridge after being left overnight.

    I’m from Bakewell, well about 4 miles away! Went to school in Bakewell. The traditional pudding is amazing. Not saying yours isn’t good though x

    Are these the right amounts of ingredients in the recipe? I made them this afternoon and kept them in the oven for 54 minutes because they were still so wobbly. Took them out because the top started to get too brown ( my oven is a bit crap so I use an oven thermometer as standard). Even after 5 hours in the fridge they are oozy and not set at all in the middle. The very outer parts are but anything else about an inch or so into the middle of the tin is just runny under the crispy top 😢

      Yes, they are. Everything I do in the video is as written on the recipe - if it doesn't bake well it can be down to ingredient swaps, using a tin that isn't metal, or actually the mixture not having enough air so it's not been mixed enough x

    These are my fav flavours. In your book it says bake for 30-35 minutes, but in this clip you say 25 minutes. Which is it please?

    Do you recommend using actual butter or is swapping it for baking block ok? I tend to use baking block for brownies because they have such a strong chocolate flavour but I’ve never tried it for a blondie.

      I always use good quality unsalted butter for my blondies, and brownies. I'd imagine that baking block would affect both the texture and the taste.

      @@KellyAnnDaviesI understand but Jane has previously said baking block is a good swap in some recipes and I don’t find a significant difference in brownies because of how strong the dark chocolate taste is. Just wondering about the blondie version

      Baking butter or block butter works for a traybake such as a blondie!

    Sadly I don't like Almonds, so i won't be making these Jane. They do look nice though
