We get to see Force effects introduced in less dramatic scenes so they are already established as "existing" when they get used in a more dramatically impactful scene. That makes it believable. If the Force is simply used as a deus-ex-machina whenever the writer painted himself into a corner, it becomes corny. Also, the force has limitations, it has to have them. There are certain limits that must not be broken or else the whole movies break down. If the Force can literally do anything, the stakes that were carefully raised crumble down into a "why bother, the Force can fix it".
