I'm a biologist and I've telling that to my parent for years.
2 years ago a medical doctor told my father that vitC doesn't cure the common cold, that in fact there is no cure for the common cold, which I have been telling him for years. He acted totally surprised and finally took it as a fact because he was told by his doctor. Until then they questioned what kind of biologist I am for telling them that Vitamins are not a miracle cure. To my frustration, my mother is still like that.

Health science is actually very important and deals with controlling water born diseases, air, waste disposal and even inviromental impact on population health. Infact good health science infrastructure is what separates high income countries from low income countries in terms of mortality due to easily preventable illnesses like desentria and typhoid.

People who are vegans for health reasons believe that animal products are bad for you. That includes meat, fish, eggs, and dairy. I'm not just talking about "unhealthy" meat like red meat or deep fried meat. Many of these people believe that all animal products should be limited or even eliminated.
Other people believe that carbs are bad for you and should be limited. I'm not just talking about "unhealthy" carbs like white bread or white rice. They still think that even wheat bread or brown rice should be eaten by people much less.
So if a person removes most or all carbs, meats, dairy, and eggs from their diet, then the only thing left to eat is fruits and vegetables. Fruits and vegetables are almost universally accepted to be healthy. However, the problem with fruits and vegetables is that hey are not very filling by themselves. Have you even been really hungry, then ate an apple or carrot and that made you feel full and satisfied? Probably not.

Paul Olsen If you don't eat carbs, you need to eat fats. It's not "ignoring" the fat in the peanut butter, it's eaten because of the fat.
Your body has to get energy from somewhere and only proteins are difficult for the body to use long-term. On low-fat, you get energy from carbs. On low-carb, from fat. It literally, honestly is "pick one" for medical diets.

Carbs and fruit are fine. Also there are many ways to prepare vegetables so they suit your tastebuds and fill your belly, you don't have to just eat them straight up. That's closer to the raw diet, but even then there's more to that than carrot sticks and apples (e.g. pickled foods are still considered raw).

Yeah it would most likely simply leave a bad taste in your mouth as it forms a salt but that would be about it. Then again if the water had carbonate in it (which it most likely does), the reaction would give carbon dioxide which is probably what they were trying to show.
