Rosie, I have made this sourdough ciabatta twice now and when I say it's foolproof - Y'ALL, I am not even a breadmaker and I can do this! Today, one of my loaves kinda got the air knocked out of it when it stuck to the board during transfer, so I was worried it would be dense, but no! Perfectly chewy, big air pockets, perfect sourness. This recipe is so simple and delicious! I can't wait to try your cinnamon rolls soon, too!

Dear Rosie, Thank you so much for a wonderful recipe but I did a big whoops. When you said to proof the dough overnight in the frig if you live in a warm climate, I though since I had the air conditioning on I could leave it on the countertop. Nooooo! I woke this morning to my dough pushing the top off the container and trying to spill out the sides. It’s in the oven right now and I think it will still turn out pretty good but I’m going to start a new batch right away and put in the frig this time for overnight proofing! Thanks again for a wonderful video ❤

Hiii! Thanks so much for checking out my videos and that's a great question. A starter that's fed a day before and past its peak can be used in this recipe without any major changes. Be well and happy baking
Hi Rosie, when you are using unfed starter from the fridge, is this fully mature starter? As in starter that's been fed for 6-7 days? I guess discard is not the same as fridge starter, is that right?
Hi. My bread was a fiasco. the dough turned liquid. Do you think i need to put less water and also i have used all purpose flour? I have tried other recipe with sourdough on other channels and my dough was also liquid . You cannot manipulate at all after final proofing. Hooe you can help thank you @@RosiesKitchenAdventures
@@marylinehau9980 Oooh no!! I'm so sorry to hear that it didn't work out as expected. Here are some things that could potentially help. If you are measuring the flour, it might be helpful to switch to weighing to ensure that it's the right amount since measuring flour accurately can be difficult. You can also reserve ¼ cup of the water and only add the rest 1 tablespoon at a time if the dough feels too dry. If you live in a humid climate, you'll need a bit less water. If your room temperature is quite warm, your dough might be overproofing so you'll want to do the final proof in the fridge instead. Lastly, all purpose flour tends to absorb less water than bread flour or whole grain flours so it might be worthwhile trying bread flour to see if it makes a difference. I hope some of this helps! I know sourdough can be frustrating but all the trial and error will eventually pay off!
Sadly mine did not work out like yours (or others commenting). It was too heavy to eat and had to go to the bin. Maybe the cold temps we have at the moment?
Hiii! Thanks so much for checking out my recipe and I'm so sorry to hear that the recipe didn't work out as expected. My room temperature is about 66-68 deg F so if it's colder than that in your home right now, that could certainly impact the rise and make the dough more dense. You could either let it ferment even longer until the dough has doubled in volume or find a warm place to speed up the fermentation. I hope that helps! Be well and happy baking
I tried to make these and they tasted amazing but they were flat when I baked them. They are soft but flat 😢 not sure what I did wrong. I’m new at sourdough.
Hii again! There's always a bit a trial and error with sourdough so it's great that they tasted good! If your starter is kinda new or if it was colder in your kitchen like you mentioned before, the dough might not have risen as much which can lead to flatter bread. Next time, try keeping the dough in a warmer spot in your home and that could help. Also, when you are transferring the dough to a cutting board (if you are cutting it into smaller loaves before baking) or a baking sheet, try to be as gentle as possible so the dough doesn't deflate too much. That will help it poof up more when it bakes. Keep up the great work on your sourdough journey!
Hiii! Thanks for checking out my video and that's a great question. Yes, you can use discard that you have in the fridge. That's essentially what I'm doing here since I'm using my starter straight from the fridge that I haven't fed in about a week. I hope that helps and I'd love to hear how it works for you!

Lastly, all purpose flour tends to absorb less water than bread flour or whole grain flours so it might be worthwhile trying bread flour to see if it makes a difference. I hope some of this helps! I know sourdough can be frustrating but all the trial and error will eventually pay off!
@@RosiesKitchenAdventures thanks for your reply. I will try with less water. Unfortunately i can find bread flour.
Hi there Rosie. Thank you for this recipe.

Damn that looks good
Looking good! Could you add ml and grams in your recipes? Especially cups can be confusing for non Americans 🙏
Hii! Thanks for checking out my videos and that's super helpful feedback! I'll start adding that information. Be well and have a wonderful weekend!
Will starter die if left in the refrigerator without feeding it?
Can I just use discard that I have in the fridge?
Hiii! Thanks for checking out my video and that's a great question. Yes, you can use discard that you have in the fridge. That's essentially what I'm doing here since I'm using my starter straight from the fridge that I haven't fed in about a week. I hope that helps and I'd love to hear how it works for you!

Hiii Maria! Thanks so much for checking out my video!
